Mini Key Lime Pie Bites

August 17, 2016 by Laura Tucker 6 Comments

We’re in our first week back to school here in my neck of the woods. For some reason, I’ve always felt like the return to school means the end of summer, which really isn’t true at all. I mean, it’s HOT outside until October here, so it certainly feels like summer for the majority of the year! But to help me fight that “summer’s over” feeling, I try to cling to my favorite summer time treats for as long as I can.

Without question, my favorite thing about summer is heading down to the gulf and and breathing in that sweet salty air. I live close enough to the beach that it’s totally feasible to take a day trip down, so getting to do that every now and then really puts a pep in my step. Sure I enjoy the ocean, the fishing and the scenery, but what I REALLY love is the cuisine.

Mocha Fudge Brownies with Creamy Coffee Glaze

My house has exploded. The living room is a disaster area, there’s laundry strewn over all of the sitting areas and my kitchen is a complete danger zone. It’s a hot mess, y’all. It’s a total circus with one little toddler monkey who is the ring leader of the show, and I am certain she won’t be helping in the clean up efforts!

Perhaps you’re laughing at my situation because you’ve totally been there. Or maybe you’re even there right now! I’m currently curled up in a little clean spot on my couch that I miraculously found, staring at all of the work that is piled up before me. Most days I wake up well before the sun to try to get things done and tend to the chores that I was too tired to take care of the day before.

Sometimes in this tired stupor I catch myself daydreaming of “me” time. If only I could take a 10 minute vacation away from this explosion site and just breathe. If only I could get a little pep back into my step. If only I could just have a moment to myself to savor. A moment where I can forget about my stresses and just indulge a little.

Cheesy Spinach and Kale Pancake Bites

August 8, 2016 by Laura Tucker Leave a Comment

My 14 month old has started to turn into a sort-of picky eater. If it’s not a strawberry, banana, cheese or a “puff” snack, she’s probably not very interested. There are a few exceptions to that rule, but trying to find something she won’t turn her nose up at is often like trying to find Atlantis. I’m trying to tell myself that this is a phase that every toddler goes through, but I’m still often left struggling to find a way to make sure she’s getting all of the healthy and nutritious things that she needs.

Spaghetti Bombs – A Perfect Back to School Treat

August 5, 2016 by Laura Tucker 2 Comments

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #CampbellSavings   #CollectiveBias

Alright, y’all. Ready or not, it’s back-to-school time! (I can’t even believe I’m saying that. Where did the summer go?!) While many of you may be a little bit giddy on the inside to send your kiddos off to school, the harsh reality of getting back into a routine and struggling to balance time amongst different extracurricular activities may seen a little overwhelming.

“How am I going to manage my time? How will my kids adjust? What in the world will I pack in their lunch boxes? Where ARE their lunch boxes? What can I fix for supper on the fly that’ll please everyone?”

If you find yourself asking those questions, you’re not alone. I promise! This time of year is just so darn busy. While I can’t necessarily answer all of those questions for you, I think I can definitely help you out with a few of them! Just sit back, relax and read along. Remember: You got this!

Spaghetti Bombs - a perfect back to school treat that allows you to eat spaghetti on the go (and with your HANDS!) These are so easy to make and are way more fun to eat then traditional spaghetti! #CampbellSavings #ad

Since it’s always a little difficult to find ways to juggle different activities, balance our time and find a way to muster up the energy to get it all done, it’s important to simplify certain areas of our day the best that we can. When it comes to meal and snack time, sometimes the things we fix often wind up being a total afterthought. I’ve been there.

Your creative juices are completely depleted by the end of the day and the most inventive thing you can come up with is to throw some cheese on some noodles or microwave some chicken nuggets and just call it a day. Besides, you really didn’t have time to do much else anyway. And there are other times when we feel like we need to cook a 5-star meal for the family and then get disappointed when we didn’t have time to do it. It’s easy to over-complicate things when we’ve suddenly become busy.

But it doesn’t have to be that way, y’all! Let me explain a little further: I’ve got a recipe for you that your WHOLE entire family will love. It’s easy, it can be made ahead of time, it makes plenty of leftovers, you can easily pack it for lunch AND you can even eat it with your hands. Sounds like a winner, right? These Spaghetti Bombs are TOTALLY winners, and you’re going to love them. I guarantee it!

Spaghetti Bombs - a perfect back to school treat that allows you to eat spaghetti on the go (and with your HANDS!) These are so easy to make and are way more fun to eat then traditional spaghetti! #CampbellSavings #ad

These two little gems are staples in my pantry year round, but they’re especially valuable to me during this time of year. They’re the stars that make this particular recipe shine, and they’re huge time/life savers during the back-to-school season.

Prego Italian Sauce is, by far, my favorite pasta sauce on the market. As much as I’d love to make a homemade pasta sauce for my family, it ain’t happening. Seriously, who has time for that?! Prego is the closest tasting thing to homemade I’ve ever tried, and it’s blend of sweet and savory flavors are just perfect for my family. I also love to keep a variety of V8 juices on hand because they help sneak in extra fruits and veggies into our diet that we may not be getting otherwise. Have you seen the V8 + Energy varieties? They’re the bomb, y’all! They give me a little boost of natural energy (derived from green tea) to help me conquer the world (or, at least back-to-school time.) 😉

Spaghetti Bombs - a perfect back to school treat that allows you to eat spaghetti on the go (and with your HANDS!) These are so easy to make and are way more fun to eat then traditional spaghetti! #CampbellSavings #ad

You can easily find these two items and other Campbell’s products at your local Walmart. Make sure you stock up as you’re out and about getting your back to school shopping done! (And don’t forget to print the coupons found at the bottom of this post!)

Alright, alright. Enough chit-chat. Whaddya say we get started making these spaghetti bombs. I’m starting to get hungry! 😉

First, start out by boiling an entire box of spaghetti noodles. In a separate bowl, scramble two eggs  and mix in some shredded cheese and melted butter. While those noodles are cooking, pull out another sauce pan and combine a package of frozen meatballs with a jar of Prego Italian Sauce and cook over medium heat.
Spaghetti Bombs - a perfect back to school treat that allows you to eat spaghetti on the go (and with your HANDS!) These are so easy to make and are way more fun to eat then traditional spaghetti! #CampbellSavings #ad

You’ll also want to spray two 12 count muffin tins with a non-stick spray and preheat your oven to 350 F while your noodles are cooking. Once the noodles are done, drain them and immediately combine them with the egg and cheese mixture. Stir well until the noodles are completely coated. Using a fork, scoop the noodles into each muffin compartment. Give the fork a swirl to create a “nest.”

In a separate bowl, combine a container of ricotta cheese with a blend of your favorite shredded cheese. Scoop a spoonful of this mixture onto each nest. Add a meatball to each one and then top with a little mozzarella before throwing them in the oven to bake for 25 minutes. And just like that, dinner is served!Spaghetti Bombs - a perfect back to school treat that allows you to eat spaghetti on the go (and with your HANDS!) These are so easy to make and are way more fun to eat then traditional spaghetti! #CampbellSavings #ad

When I think of foods that you can eat with your hands, spaghetti has definitely never come to my mind before. Normally, spaghetti would be something that I could never pack in a lunch box  to take to school. It isn’t exactly a portable “on the go” meal, and it isn’t a meal that my family gets particularly excited about.

But that’s exactly why I love these spaghetti cups. They defy all of those rules and things we previously thought about spaghetti before. I can pack these in a lunch box. They can be eaten with your hands on the go. My family is excited to eat them because they’re so different from normal, boring spaghetti. I can throw this together on a busy weeknight, and I can make them ahead to save on time. Since this makes such a large batch, I often reserve some of the noodles and meatballs in  separate containers and just pull them out of the fridge and pop them in the oven as needed. Easy!

Here’s a free printable version of the recipe for you to save and try out during this busy time of year. Let me know if you give them a go – I’d love to hear how yours turned out! (FYI: They’re also a great after school snack. Just pop in the microwave for 15 seconds and you’re done!)

The Secret to the BEST Country Fried Steak: Venison Edition

July 28, 2016 by Laura Tucker 10 Comments

When you think about your favorite comfort foods, what comes to your mind? A lot of people love a creamy bowl of mashed potatoes, or even a cheesy pile of homemade macaroni and cheese. Maybe it’s something as simple as a grilled cheese sandwich! I’ll admit that I have a pretty extensive list of comfort foods, but one of my favorites that makes the tippy top of the list is Country Fried Steak.

Country fried steak goes by many different names. Some call it “chicken fried steak,” while others call it “cube steak.” There may be a few differences in the three, but if you ask me it’s all basically the same tasty goodness! Most people make it with beef round steak, but my family is all about the venison. My mother in law recently taught me how to cook this dish, and I’m pretty darn certain that she makes it better than anyone on the entire planet. Aside from her wonderful cooking skills, her secret to making perfect country fried steak is in one seemingly unusual little tool. So grab a cold bottle of Coca Cola and sit a spell. You’re gonna wanna read this one! 😉

The Secret to the BEST Country Fried Steak! Trust me, it's not at all what you may think! I made this version using venison, but most people would opt for beef…

Easy Peasy Peach Compote

July 21, 2016 by Laura Tucker 21 Comments

One of my favorite things to do on the weekend is fix a hearty breakfast for my family. During the work week, my husband usually grabs something quick and easy (aka Little Debbie Oatmeal Pies), and I almost always eat a bowl of cereal. I have zero complaints about eating my cereal (it’s basically my favorite food group), but it doesn’t satisfy my craving to actually cook something.

Cooking is one of my favorite ways to provide for my family, so this past weekend when my husband woke up early to cut the grass and my daughter was still snoozing, I jumped at the opportunity to cook my heart out! I had 3 plump and juicy peaches sitting on my counter, so I started trying to think of a way to incorporate them into our breakfast.

Easy Peach Compote - the perfect sweet topping for pancakes, muffins, pound cakes, and SO much more!

I broke out my favorite skillet and whipped up some pancake batter. I had a hankering for fluffy brown pancakes, but this time I thought that I’d ditch the syrup and go for something even sweeter using the peaches. This Easy Peasy Peach Compote takes less than 15 minutes to make, so while I was flipping flapjacks I had my peach sauce simmering away in a small sauce pan. In my opinion, I could always ditch the syrup in exchange for the golden sweetness of this succulent peach compote. It’s absolutely delicious!

I took 3 peaches and peeled, pitted and diced them. I put them in a small pot on the stove and added in some brown sugar, water, vanilla and cinnamon. I brought them to a boil and allowed them to simmer for about 12 minutes. The brown sugar blending with the sweet peach juice forms a thicker syrup-like sauce – making it PERFECT for pouring over a tall stack of pancakes!

Easy Peach Compote - the perfect sweet topping for pancakes, muffins, pound cakes, and SO much more!

Making a fruit compote is super easy, and this recipe can be made with nearly any fruit. It’s a great addition to top your muffins, cakes, or yogurt with!

Here’s a free printable version of my recipe. Enjoy!

Ingredients

  • 3 fresh peaches- skinned pitted and diced
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1/4 cup water
  • 1 tsp cinnamon

Instructions

  • Combine all ingredients in a medium saucepan and bring to a boil.
  • Reduce heat and allow to simmer for 12-14 minutes, being sure to stir occasionally.
  • Sauce will gradually thicken and become syrup-like.

Notes

I chose to sprinkle a tiny bit of powdered sugar on top of my compote and pancakes. That's completely optional - but it's delicious!

Zucchini & Feta Cheese Fritters

July 18, 2016 by Laura Tucker 8 Comments

Have you made your way to a farmer’s market so far this summer? If so, you’ve probably seen a surplus of beautiful bright green zucchini and golden yellow squash. Aside from a plump juicy tomato, squash and zucchini are my absolute favorite summer time vegetables. When I first got married and started becoming adventurous in the kitchen, I struggled with finding a way to prepare zucchini (other than making loaves of zucchini bread).

I knew I could always slice it and cook it with a little olive oil, or I could just stick to my Southern roots and put it in a casserole, but I got bored pretty quickly with preparing it those ways, and I really needed to try something new if I was going to continue to stay in love with this veggie. Last year my husband and I tried this recipe for the first time and I started falling in love with zucchini ALL over again!

Zucchini and feta cheese fritters - A scrumptious recipe that's perfect for using up all of that summer time zucchini!

Last week I was lucky enough to get my hands on some more zucchini, and I knew without hesitation that I’d be making a batch of these yummy golden fritters. I know most people would laugh at the concept of frying a vegetable. I totally get that frying takes basically every healthy benefit out of the food, but here in the South it’s just a way of life! Plus, they’re seriously delicious. Seriously, y’all. You gotta try it!

I washed the zucchini off and shredded it using a cheese grater. Zucchini have an extremely high water content, so it’s important to try to squeeze out all of the water that you can.  For this recipe I used 2 zucchini, and it made about 2 cups worth when shredded.

Zucchini and feta cheese fritters - A scrumptious recipe that's perfect for using up all of that summer time zucchini!

I combined the remaining indredients (found below) with the zucchini and formed the zucchini mixture into thin patties. I fried them in a skillet for roughly 1 minutes, flipped them over halfway through cooking.

My husband and I really enjoyed eating the fritters with a little bit of ketchup, and we’ve also eaten it with marinara sauce. The key when making this recipe is to get the fritters pretty thin, because you want to make sure the insides get cooked all the way through. The first time we ever made them we made a few patties that were pretty thick, and unfortunately the outside cooked way faster than the inside and we were left with a gooey center. We definitely learned from that mistake!

Bacon and Cream Cheese Pesto Bites

July 14, 2016 by Laura Tucker 1 Comment

Last week I made these absolutely divine mini taco bites using filo cups. I had actually never used filo cups before, but after spotting them in the freezer section at my local grocery store, I thought I’d give them a try! I was originally attracted to them by the idea that you can use them for pretty much anything. You can make desserts, appetizers, or even a meal out of them if you really wanted to! They’re golden, flaky and oh so tasty!

I picked up two packages, one for the taco bites and the other to use for anything that popped into my mind. I was baking in my kitchen one afternoon and noticed that the recipe I was using called for only half a brick of cream cheese. I had already let the cream cheese soften, so I needed to come up with another use for the cream cheese soon.
