My house has exploded. The living room is a disaster area, there’s laundry strewn over all of the sitting areas and my kitchen is a complete danger zone. It’s a hot mess, y’all. It’s a total circus with one little toddler monkey who is the ring leader of the show, and I am certain she won’t be helping in the clean up efforts!
Perhaps you’re laughing at my situation because you’ve totally been there. Or maybe you’re even there right now! I’m currently curled up in a little clean spot on my couch that I miraculously found, staring at all of the work that is piled up before me. Most days I wake up well before the sun to try to get things done and tend to the chores that I was too tired to take care of the day before.
Sometimes in this tired stupor I catch myself daydreaming of “me” time. If only I could take a 10 minute vacation away from this explosion site and just breathe. If only I could get a little pep back into my step. If only I could just have a moment to myself to savor. A moment where I can forget about my stresses and just indulge a little.
So here I sit, still staring at my mess of a house without a clear plan of attack as to how exactly I’ll get it all done, but suddenly I’m feeling much, much better about it all. Why? Well, even Superwoman has something that makes her tick, and I’ve found that my superpowers always come out when I’ve got a tall, cold glass of iced coffee in my hand.
And I just so happen to keep it stocked in my fridge for when I need to have some of that coveted “me” time and indulge. International Delight Iced Coffee is my go-to splurge every single morning. It holds a special place in my heart for several reasons, and it’s basically the equivalent of liquid gold as far as I’m concerned! Plus, it already has the perfect amount of sweetener and cream in it. The fact that it’s ready to drink and that I have to do ZERO work really sets it over the top!
Because I live in a very rural part of Alabama, going to “town” doesn’t happen very often. It’s a 30 minute drive to the closest grocery store, and if I wanted to treat myself to one of those lovely fancy cups of iced coffee from a coffee shop, I can just plan on traveling even further (45+ minutes) to get it. There is no “drive thru” in my neck of the woods. No one hands me my favorite iced cup of coffee when I pull up to a window (and now that I think about it, that’s probably an ok thing. Those places are so expensive!)
So if I’m planning on having a little delight in my day at all, I make sure I swing by Walmart to stock up on my International Delight Iced Coffee. My current obsessions are Mocha and Caramel Macchiato! It’s located in the refrigerated juice/tea section, so keep your eyes peeled when you go!
Another reason I’ve absolutely fallen in love with with International Delight Iced Coffee is because not only do I get to enjoy it in my glass, but I also get to enjoy it on my plate! In fact, it’s the key ingredient in my Mocha Fudge Brownies! They’re topped with a creamy coffee glaze that is absolutely lip-smackin’ good. They’re such a decadent treat to savor! This is another way that I take back a little time for myself each day. With a mocha brownie in one hand and my International Delight Iced Coffee in the other, I’m quite confident I could rule the world. 😉
Incorporating International Delight Iced Coffee into these brownies really sets them apart from any other brownie I’ve ever had. The amount of coffee flavor is perfect, and they taste like one of those really tasty (and really expensive) brownies that you’d buy at your favorite coffee joint.
To start the brownie batter, I combined melted butter, white and brown sugar and 1/4 cup International Delight Iced Coffee – Mocha flavor. The smell of the coffee mixing with the butter and sugars is absolutely glorious!
Next comes the eggs. I prefer to bake brownies with eggs that are room temperature. Eggs that aren’t cold typically blend into batters much easier and make for more even cooking. If you’re in a hurry and want to speed up the process of getting the eggs to room temperature, you can always let them rest in a bowl of warm water for 10 minutes. You don’t have to do this to make the brownies turn out right, but I recommend it! 🙂
Next, add in a little cocoa powder, vanilla extract, salt and flour and give it a good stir with a hand mixer.
Doesn’t that brownie batter look SO good?! I could just eat it straight off the spoon! (Be careful consuming batter with raw eggs. It can give you a tummy ache!)
Preheat the oven to 350 F and bake the brownies for 40 minutes. While they’re baking away, go ahead and start making the coffee flavored glaze. In a mixing bowl, combine butter, powdered sugar, iced coffee and a little bit of cocoa powder. Once the brownies are out of the oven and completely cooled, pour the glaze over the brownies and smooth it out. Bless the soul that gets to lick those glaze-covered beaters, because you CAN eat that stuff straight out of the bowl! (No eggs in that one!) 😀
My favorite part about the coffee glaze is that it slowly seeps down into the pores of the brownies and lightly hardens. It’s simply amazing, y’all! I topped my brownies with chocolate and caramel semisweet morsels, chocolate shavings and a store bought caramel sauce. The caramel really accentuated the coffee flavor in the brownies, and is a match made in Heaven when paired with the my iced caramel macchiato!
Now that I’ve had some time to indulge and find a little delight in each day, I can get back to the work before me and tackle it no problem. After all, first I do the coffee, then I do the things! That’s a rule in this house! 😉

Mocha Fudge Brownies with Creamy Coffee Glaze
Ingredients
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs - room temperature
- 1/2 cup cocoa powder
- 1/2 tsp vanilla
- 1/4 cup International Delight Iced Coffee - Mocha
- 1 cup all purpose flour
- 3/4 cup butter
- 1 tsp salt
- Glaze:
- 1/4 cup butter
- 1 cup confectioners sugar
- 1/2 tsp cocoa powder
- 1 Tbs International Delight Iced Coffee - Mocha
Instructions
- Preheat oven to 350 F
- Thoroughly spray an 8x8 baking pan with nonstick cooking spray
- In a microwave safe bowl, melt butter - be careful not to scorch
- Add in sugars and melt once again in the microwave for about 20 seconds
- Stir in the International Delight iced coffee and allow to cool
- Gently beat in eggs, cocoa powder and vanilla until well combined
- Stir in flour and salt and stir well
- Pour into baking dish and bake for 40-45 minutes, or until done in the center. (These brownies are supposed to be fudgey, so don't worry if there's still a very slight amount of batter that sticks to your knife or toothpick when you insert into the middle. It'll finish cooking as its cooling.)
- Allow brownies to cool completely before applying glaze. *This is important*
- To prepare the glaze, combine all ingredients and beat with a hand mixer until light and fluffy
- Pour glaze over brownies and allow it to harden slightly before cutting
- Top with semisweet morsels, chocolate shaving, caramel drizzle or serve without!
