Cinnamon Stewed Apples

This recipe for cinnamon stewed apples is one of my favorite comfort foods of all time. With a scoop of ice cream on top, you’re in for a real treat!

It may still be 95 degrees outside here in Alabama, but make no mistake about it, there’s a nip in the air! Truthfully,  all I mean by that is that the humidity has just slacked off a good bit and it doesn’t feel like a sauna outside, but I’m pretty sure most of us Alabamians would probably classify that as a nip! 😉

And when I feel Fall in the air, I waste no time getting in the Falliday spirit! One of my favorite ways to jump into the season is to fill my home with the aroma of all of those glorious cinnamon-y spices, and it’s a total bonus if those smells just so happen to be coming from my kitchen!

Cinnamon Glazed Stewed Apples

 

One of my favorite Autumn-inspired dishes is cinnamon stewed apples. It’s simple, delicious, and BOY does it make your house smell amazing when it’s simmering in the pot!

One of my favorite grocery stores was recently cleaning out their produce section and was marking down produce that they needed to move out quickly. I stumbled upon a bag of mixed apples marked down to just 99 cents, and I knew right away that stewed apples were definitely happening as soon as I got home!

Once I unloaded the groceries and put the baby down for a nap, I washed and peeled 3 of the apples.  I got out my handy dandy apple slicer and had the apples chopped and ready to stew in seconds!

Next, I got out my favorite skillet and thew in the apple slices with a little dab of butter. I cooked the apples on medium-high heat for about 5 minutes until they were nice and tender.

Once the apples were done, I removed from heat and added in flour, sugar, all spice and cinnamon. I gave it a good stir and let it sit for a few minutes, just enough to get that beautiful, thick and delicious glaze over them!

Ingredients

  • 3 Apples - peeled cored and sliced
  • 3 Tbs butter
  • 1 Tbs flour
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 cup sugar

Instructions

  • Peel, core and slice apples.
  • In a large skillet, melt butter and toss in apples. Allow to cook on high for roughly 5 minutes until apples are tender but not mushy. Stir frequently while cooking.
  • Remove from heat and add in flour, cinnamon, allspice and sugar and stir until well combined. As the apples cool, a thick glaze will form.
  • Serve immediately while warm - best over vanilla ice cream!

How to Freeze Carrots

Although I tend to shop at bigger grocery store chains like Publix and Walmart, I love to visit mom and pop grocery stores in my area from time to time. Shopping local is important for the economy, and you’ll often find sales and deals that you wouldn’t ever find in a bigger chain store! A few weeks ago I walked into a local grocery store and my mind was blown by some of the crazy markdowns they had!

Seriously, this grocery store is like a precious gem that I am forever treasuring. It’s such a rare occurrence to get a deal on fresh produce, and this particular market very heavily reduces produce that is closely approaching it’s expiration date. (You don’t see that at Walmart, y’all!)

So I stumbled across this HUGE bag of organic carrots that had a few days of life left. It was previously priced at $5.99 marked down to just 99 cents. That bag of carrots flew into my cart faster than a speeding bullet, y’all! 😉

I knew I’d need to do something with them pretty soon, so I decided to go ahead and freeze them so I could just pull them out and use them whenever I wanted to. The process of properly freezing carrots is super easy and doesn’t take long at all.

Step 1: Wash carrots thoroughly.

You want to make sure there’s no dirt left on the carrots. You can lightly scrub them with a brush if you want to really make sure you’re getting the dirt off. I prefer to peel my carrots with a peeler, but you can skip this step if you prefer. It does not effect the freezing process.

Step 2: Remove tops and slice or shred

Using a knife, remove the tops of the carrots (I like to cut a little off the other end, too) and slice into rounds. You can also shred some if you’ll be making a carrot cake in the future like I plan to do!

Step 3: Blanch and Ice Bath

Get a pot of water boiling and toss your sliced carrots in to boil. You’ll want them to boil for about 3 minutes. While they’re boiling, fill a large bowl with ice water. Immediately pour the carrots into a strainer and then transfer directly into the ice bath. Let them sit in the ice bath until all ice cube have melted. If you’re putting up shredded carrots, you can use this blanching process, but I’ve found it to be extremely messy and a little tedious. Blanching shredded carrots isn’t completely necessary. If you put them up without blanching, just make a note to make sure you use them up within 6 months or so.

Step 4: Remove excess water and seal in freezer bags

After you strain the water off of the carrots from the ice bath, lay out on the counter on a dish towel and allow to dry. I patted off any excess water to speed up the process. Seal in a freezer safe bag and make sure all excess air is pressed out of bag. Frozen carrots if blanched will last up to a year in the freezer.

It’s a good idea to write the date that you put up the carrots so you have an idea of when they need to be used by. You can also portion them into measurements (2 cups, 1 cup, etc) if you have a special recipe you like to use them in. It makes preparing recipes super easy, and that way you don’t have to thaw out a whole bag of carrots when you only needed half of the bag!

I’m not a huge fan of eating carrots by themselves, but I LOVE them in soups, pot roasts, carrot cake and more! I’m really looking forward to making a big batch of homemade chicken noodle soup and using these carrots once it starts getting colder outside! What’s your favorite recipe to use carrots in?

Soft Batch Pumpkin Sugar Cookies

Have you ever noticed that very few pumpkin-y recipes actually call for a whole can of pumpkin puree? So many time you’re left with half a can of pumpkin and you frantically start searching Pinterest trying to figure out what in the world you can do with the leftovers. C’mon, y’all. I know I’m not the only one that’s happened to! I mean, throwing half a can of pumpkin puree away isn’t an option in this house. That’s downright sinful. We love pumpkin way too much!

These days I don’t tend to worry too much about that sort of thing. If I’m ever baking with pumpkin and have some leftover in the can, I just pull out this handy dandy little recipe to use it up! Happy Fall, y’all!

Okay, okay. I know it isn’t Fall just yet. It’s still 85+ degrees outside here in Alabama, but I can still dream about Fall and the beautiful cool weather, right? As I’ve mentioned before, Fall is my favorite season of all time. The local stores are already putting out Halloween and Fall decor, and I just can’t help but get in the spirit!

Halloween is always such a fun time of year. My family doesn’t actually celebrate Halloween, but we do participate in our church’s annual Trunk or Treat festival where we always dress up in fun costumes. In general, I have no problem whatsoever with the commercialized version of Halloween. I mean, what’s not to love about dressing up, eating candy and getting a little spooked here and there? As kids all across the country are headed back to school, I can’t help but reminisce on my own school days – particularly my college days. I remember the late nights studying that turned into mornings, struggling to make it to class, finding ways to make ends meet, and trying to figure out what in the world my next meal would be. Do you feel it? That slight change in the morning air? You know, that tiny little preview of Summer fading into Fall when the temperatures start changing? Even though it was for a very, very brief moment this morning, I finally felt it. It’s been long awaited, and it was definitely warmly welcomed. Fall is my absolute favorite time of the year. Sure, the cool weather, cozy long sleeved shirts and boots and all of the pumpkin flavored things are great, but my heart loves this time of year for one thing in particular:

 The excitement that football season brings is unlike any other. Here in the South, football is bigger than big, and the devotion to our teams is unmatched. The hometown and state rivalries are beginning to gear up.
