Pumpkin Custard Pie

As much as I love the Fall season, there’s no doubt that it’s typically one of the busiest times of the year for me and my family. My husband and I sat down a few days ago and reflected on our day and how we were feeling. We’re both tired, mentally and physically. We both have multiple different projects going on, and we’re being pulled in many different directions. It’s okay to be busy and to have goals to work towards, but it’s not okay to remain mentally and physically tired all the time. Sometimes, you just need to take a break.

I haven’t sat down and talked with the hubs much about us taking a little vacation, but it’s another bullet on my to-do list. So until I can find the time to plan something of the sort, I think I’ll just set my list aside for now and bake.

Sometimes I consider cooking to be a chore, but most of the time I feel like it’s a much needed escape for me. If I’m lucky enough to get the toddler to go down for a nap (she’s been fiercely protesting her naps here lately,) I’ll ditch my work and just get lost in the kitchen – getting my creative juices flowing and then indulging in the fruit of my efforts.

So I took some time for myself and baked a pie. A beautiful, pumpkiny, custardy, creamy pie with a big ‘ol dollop of Cool Whip right on top. Just for me, and me only. I needed that pie, y’all. And boy, was it good to me.

I love traditional pumpkin pie. I mean, I really love it. I can skip all of the other stuff on the Thanksgiving table and go straight for the pumpkin pie and call it a day. We’ve still got a while before Thanksgiving is here, though, and my hankering for the stuff just couldn’t wait any longer.

Instead of doing a traditional pie, though, I decided to put a little twist on it. My taste buds wanted something a little thicker, creamier, and richer than plain ol’ pumpkin pie, so I took a stab at making a Pumpkin Custard Pie with some delicious farm fresh eggs that a friend gave to us. Once I pulled it out of the oven, my heart was stolen by it’s golden brown goodness. So. darn. good.Pumpkin Custard Pie - a delicious twist on everyone's favorite Fall recipe: Pumpkin Pie! As much as I’d love to say I took the time to make a beautiful, flaky pie crust from scratch, that’s just not my cup of tea. I keep frozen pie crusts in stock in my deep freezer at all times. They’re always there like an old trusty friend when the chance comes up to bake a pie, and they’re delicious all the same. And frankly, who has time to make a homemade crust these days? (I wish I did, but I definitely don’t.) Store bought it always fine. 🙂

Pumpkin Custard Pie

Ingredients

  • 1 9 pinch pie shell frozen
  • 1 cup pumpkin puree
  • 1 12 oz can evaporated milk
  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup brown sugar - packed
  • 1 Tbs all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp all spice
  • 1/2 tsp cinnamon
  • Cool whip optional

Instructions

  • Preheat oven to 350 F
  • In a large bowl, combine eggs, evaporated milk, pumpkin, sugars, flour, salt, all spice, and cinnamon
  • Beat with a hand mixer until smooth
  • Pour into pie shell and set on top of baking sheet
  • Bake for 60-65 minutes, or until pie is set in center
  • Top with a dollop of cool whip (optional)
  • Enjoy!

Each bite of this pie helped me unwind, refocus and indulge in all of the goodness that is going on around me. Sometimes all of the good can be masked by our own busyness, but it’s so important to slow down and just take some time for ourselves. This pie was exactly what I needed.

Cranberry Pumpkin Muffins

I’ve got a little confession to make: I’m a total cereal snob.

Seriously, y’all. I’ve eaten a bowl of cereal nearly every day since I was probably 4 or 5 years old. If you were to draw my blood right now, it’d probably have a 30% cereal milk content with traces of Peanut Butter Captain Crunch or Fruit Loops in it. It’s nuts that I love it that much, but I really do. I definitely get it honestly, too, because every one of my siblings has a bowl of cereal on the regular just like I do. Maybe not as frequently as I do, but they’ve probably got at least 3-4 boxes of cereal goodness stashed away in their pantry right now.

However, sometimes I want a little something else when I wake up in the morning – and not just because I ran out of milk. (Actually, that’s usually how it goes…BUT this morning was different!)

Soft Batch Candy Corn Cookies

These Soft Batch Candy Corn Cookies are a perfect fall treat to make, bake and enjoy! Just grab a glass of milk and you’re set!

I try my hardest not to binge eat all of the delicious seasonal candies that come out during the holidays, but sometimes I just can’t help myself. For me, I’ll forever be devoted to my two loves: Cadbury Cream Eggs at Easter and candy corn during Halloween. I’ve been known to hoard them both in my pantry and nibble on them all throughout the year (because, ya know, I don’t want to forget what they taste like!) 😉

So as I was at my local Dollar General store the other day, I noticed a bag of brightly colored candy corn glistening in the corner of my eye. It was basically begging to be picked up, so into my basket it went!

If you're a candy corn fan, you're definitely going to want to try this! This recipe makes the most delicious soft & chewy cookies - and they're perfect to make for a sweet Halloween treat!My original thought was to save them until Halloween, but ain’t nobody got time for that. I wanted to eat them now! I decided to get a little creative, though, and try incorporating them into my baking. I’ve had candy corn on top of cupcakes before, but I’ve never actually seen them cooked inside something.

So after two test batches, I perfected the most delicious chewy candy corn cookies in the history of the world (totally a bold statement…but I’m sticking to it!) 😉

Soft & Chewy Candy Corn Cookies

Ingredients

  • 2 cups all purpose flour
  • 3/4 cup room temp butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp corn starch
  • 1 Tbs vanilla flavoring
  • 1 cup candy corn

Instructions

  • In a large bowl, combine butter, sugar and brown sugar with a hand mixer until mixture is light and fluffy
  • Add in vanilla and egg and blend
  • Slowly add in flour, corn starch, baking soda and salt and mix until a soft, thick dough forms
  • Add in candy corn and stir gently
  • Refrigerate for 1 hour or longer (prevents cookies from spreading when baking)
  • Preheat oven to 350 F and spray a cookie sheet with non-stick cooking spray
  • Using your hands, roll a heaping tablespoon of the dough into small balls and place about an inch or more apart from each other
  • *IMPORTANT- Make sure when forming each ball that there is not a piece of candy corn visible on the underside or the side of each ball (Candy corn showing on the top is fine). Any contact the candy corn has with the baking sheet will result in a puddle of baked liquid candy corn under each cookie. Covering any visible candy corn with a pinch of dough should help*
  • Bake for 8-10 minutes
  • *Note - cookies may appear under cooked when first removed from oven. Do NOT cook any longer - the cookies will continue to set while left to cool on the cookie sheet
  • Allow to cool at least 10 minutes before serving

You know what these cookies remind me of? Those sinfully delicious soft and chewy cookies that you get with your combo meal at Subway restaurants. You know, the amazingly yummy macadamia nut ones and the cranberry and white chocolate ones? The consistency of these cookies is JUST like those! With Halloween lurking right around the corner, I’ve really been getting into the festiveness of it all and channeling the mad scientist in me to concoct some spooky and fun little treats to share during the Halloween season.

When the clock struck midnight on October 1st, my blood started bubbling with excitement about all of the festivities coming up this month. For us, October is always jam packed with fun activities. Halloween Mummy Treats

I’m not sure if it’s the fact that Halloween decor has been on display in most major retail stores since the beginning of August, or if it’s just the change in the air that’s hinting at the arrival of Fall and all things Halloween, but I feel like I’ve had the song “The Monster Mash” stuck in my head for weeks.

Do you remember that song? It came out ages ago, but it’s always been a favorite of mine. It really has a way of getting me in the Halloween spirit more so than anything else. I finally broke down and decided to play it the other day just to see if it’d help get it unstuck from my head. In hindsight that was kind of a bad idea, because it really only made the situation worse. But myy daughter got to hear it for the first time, and she really thought it was a graveyard smash watching her Mommy do the monster mash!

Soft Batch Pumpkin Sugar Cookies

Have you ever noticed that very few pumpkin-y recipes actually call for a whole can of pumpkin puree? So many time you’re left with half a can of pumpkin and you frantically start searching Pinterest trying to figure out what in the world you can do with the leftovers. C’mon, y’all. I know I’m not the only one that’s happened to! I mean, throwing half a can of pumpkin puree away isn’t an option in this house. That’s downright sinful. We love pumpkin way too much!

These days I don’t tend to worry too much about that sort of thing. If I’m ever baking with pumpkin and have some leftover in the can, I just pull out this handy dandy little recipe to use it up! Haunted Halloween Pancakes

Happy Fall, y’all!

Okay, okay. I know it isn’t Fall just yet. It’s still 85+ degrees outside here in Alabama, but I can still dream about Fall and the beautiful cool weather, right? As I’ve mentioned before, Fall is my favorite season of all time. The local stores are already putting out Halloween and Fall decor, and I just can’t help but get in the spirit!

Halloween is always such a fun time of year. My family doesn’t actually celebrate Halloween, but we do participate in our church’s annual Trunk or Treat festival where we always dress up in fun costumes. In general, I have no problem whatsoever with the commercialized version of Halloween. I mean, what’s not to love about dressing up, eating candy and getting a little spooked here and there? I’m down! 😉

As kids all across the country are headed back to school, I can’t help but reminisce on my own school days – particularly my college days. I remember the late nights studying that turned into mornings, struggling to make it to class, finding ways to make ends meet, and trying to figure out what in the world my next meal would be. When you have a crazy schedule and a limited budget, you find ways to get creative when it comes to making life work! One of my saving graces during college was using coupons to buy my groceries.
