This time last year, I often found myself at my wits’ end dealing with a severely colicky little 2 month old. The days felt like the longest ones of my life. It was so hard to find relief for my child, and she would often scream for hours during the day from discomfort. It was truly exhausting for me, both physically and mentally. I caught myself wondering and asking my friends, “does this parenting thing ever get any easier?” Some of the most helpful and truthful parenting advice I received during that time was this: Babies don’t necessarily get easier, they just get different.  In one full year’s time, I’ve come to learn just how true that really is!

The road to defeating colic was a tough one. I’d hold my baby for hours at a time and walk the halls of my home with her until she fell asleep. Now that she’s a toddler, I’d give just about anything in the world to hold her for hours and walk her around the halls until she fell asleep in my arms. Unfortunately, me taking time to hold or rock her just doesn’t fit into her busy toddler schedule. My child is into everything, and she’s not slowing down for anyone!

And because of her new toddler tendencies to get into everything, it’s become so much easier for her to find herself in situations that could get her into trouble, or even put her in danger. As her parent, I do try my hardest to keep my eye on her at all times, but we all know it’s easier said than done. Within a matter of seconds, a toddler can knock everything off the very top shelf without even being able to reach it, leaving you wondering HOW in the world they did it, and HOW did it happen so fast? (My theory: baby laser vision, or at least the ability to destroy things with just the blink of an eye. 😉 )

We all know that there are numerous baby monitors on the market, so it can be a little overwhelming trying to find the right one for you. Traditional audio monitors are great for babies, but as the baby gets older they leave you pretty limited in knowing where the baby/toddler may be and exactly what they’re up to. As I said earlier, toddlers are ALWAYS into something! Video monitors can also be a great option, but it just isn’t feasible to keep your eyes glued to the screen all day long to feel confident that your child isn’t somewhere they shouldn’t be.

What do I mean by that? It’s simple, really. We put the motion sensor in our laundry room, which is a very heavily trafficked area in our home since it’s where our back door is. We’ve found that putting a baby gate at the entrance of this door is majorly inconvenient, but it’s definitely a place in the house where we don’t want our daughter to go. Even though all of the laundry chemicals are up and out of her reach, I’m fearful that she’ll use her baby laser vision to somehow, some way get a hold of something she isn’t supposed to. The biggest concern, however, is our hot water heater. Unfortunately, our tiny little house just doesn’t have anywhere for it to go besides out in the open inside our laundry room. It has lots of buttons and knobs that are fascinating to her, and messing with those buttons and knobs can cause big problems with the heater (or so I’ve learned the hard way.)

Even though she knows this room is off-limits, she usually forgets about 3-4 times a day. Now with the motion sensor installed in the laundry room, I’m immediately notified if she sneaks in without me knowing. Instead of being right by her side 24/7, I’m able to have much more freedom to move around the house and get things done without worrying if she’s somewhere dangerous.

I’ll admit that I certainly never thought that a motion sensor would be something I’d ever use when I was registering for our baby over a year ago, but I’m definitely sold thanks to the peace of mind this device brings to my husband and I. Let me share a little something with you guys. Just a tiny little nugget about myself that you may be surprised to know if you’ve never met me in person:

I’m pretty darn short.

Like, really short. All you ladies that are 5’3″ or 5’4″ may think you’re short, but count your blessings that you’ve at least made it to the 5+ feet tall club, because I’m too short to even be a member of it!

I stand at just 4’11” tall, and before you say. “Oh, bless her heart” and go feeling sorry for me, just know that I’m proud as punch to be petite. Good things come in small packages, ya know! However, being WELL below the average height definitely comes with its share of struggles and disadvantages.

For instance, shopping is just plain difficult. Stuff usually does not fit well, and I often leave stores feeling certain that they just don’t make clothing to fit me. I mean, of course they make clothing to fit people my height, but I’m not trying to shop in the children’s department, y’all! 😉

I’ve always felt limited in the things I could wear because of my short stature. I’ve always had to have my pants, dresses and skirts tailored. I’ve spent a small fortune on having my clothing chopped off at the bottom because I don’t know how/don’t trust myself enough to sew a hem properly.

Aside from this whole “I’m too short for this” conundrum that I’ve *gracefully* dealt with my entire life, I’ve been dealing with another wardrobe/fashion issue for the past few years. I’m 26 years old, a professional, and a mother. I know that my butt needs to be shopping in the women’s department, but I still tend to gravitate towards the junior’s section.

Here’s why: The dresses fit me better. Here’s the problem: I’m not a “junior” anymore. I’m just downright too old for most of those clothes, and I’d rather not wear graphic prints with glitter cats and emojis all over the place. (Have you been to the junior’s section lately? Emojis everywhere, I tell ya!) Unfortunately, dresses from the women’s section often hit me mid-calf on the leg, and it is absolutely dreadful. If a dress is short, it needs to be right at my knee. It’s so rare to find a dress that hits you in the right spot on the leg when you’re my height. And don’t even get me started on maxi dresses! Long dresses have never been an option for me, no matter what department I find it in. They’re all WAY. TOO. LONG.

Easy Peasy Peach Compote

One of my favorite things to do on the weekend is fix a hearty breakfast for my family. During the work week, my husband usually grabs something quick and easy (aka Little Debbie Oatmeal Pies), and I almost always eat a bowl of cereal. I have zero complaints about eating my cereal (it’s basically my favorite food group), but it doesn’t satisfy my craving to actually cook something.

Cooking is one of my favorite ways to provide for my family, so this past weekend when my husband woke up early to cut the grass and my daughter was still snoozing, I jumped at the opportunity to cook my heart out! I had 3 plump and juicy peaches sitting on my counter, so I started trying to think of a way to incorporate them into our breakfast.

Easy Peach Compote - the perfect sweet topping for pancakes, muffins, pound cakes, and SO much more!

I broke out my favorite skillet and whipped up some pancake batter. I had a hankering for fluffy brown pancakes, but this time I thought that I’d ditch the syrup and go for something even sweeter using the peaches. This Easy Peasy Peach Compote takes less than 15 minutes to make, so while I was flipping flapjacks I had my peach sauce simmering away in a small sauce pan. In my opinion, I could always ditch the syrup in exchange for the golden sweetness of this succulent peach compote. It’s absolutely delicious!

I took 3 peaches and peeled, pitted and diced them. I put them in a small pot on the stove and added in some brown sugar, water, vanilla and cinnamon. I brought them to a boil and allowed them to simmer for about 12 minutes. The brown sugar blending with the sweet peach juice forms a thicker syrup-like sauce – making it PERFECT for pouring over a tall stack of pancakes!

Making a fruit compote is super easy, and this recipe can be made with nearly any fruit. It’s a great addition to top your muffins, cakes, or yogurt with!

Easy Peasy Peach Compote

Ingredients

  • 3 fresh peaches- skinned pitted and diced
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 1/4 cup water
  • 1 tsp cinnamon

Instructions

  • Combine all ingredients in a medium saucepan and bring to a boil.
  • Reduce heat and allow to simmer for 12-14 minutes, being sure to stir occasionally.
  • Sauce will gradually thicken and become syrup-like.
  • Remove from heat and allow to briefly cool.
  • Serve over fresh pancakes, muffins, slices of pound cake or shortbread, or however you'd like!
  • Enjoy!

Notes

I chose to sprinkle a tiny bit of powdered sugar on top of my compote and pancakes. That's completely optional - but it's delicious!

Zucchini & Feta Cheese Fritters

Have you made your way to a farmer’s market so far this summer? If so, you’ve probably seen a surplus of beautiful bright green zucchini and golden yellow squash. Aside from a plump juicy tomato, squash and zucchini are my absolute favorite summer time vegetables. When I first got married and started becoming adventurous in the kitchen, I struggled with finding a way to prepare zucchini (other than making loaves of zucchini bread).

I knew I could always slice it and cook it with a little olive oil, or I could just stick to my Southern roots and put it in a casserole, but I got bored pretty quickly with preparing it those ways, and I really needed to try something new if I was going to continue to stay in love with this veggie. Last year my husband and I tried this recipe for the first time and I started falling in love with zucchini ALL over again!

Last week I was lucky enough to get my hands on some more zucchini, and I knew without hesitation that I’d be making a batch of these yummy golden fritters. I know most people would laugh at the concept of frying a vegetable. I totally get that frying takes basically every healthy benefit out of the food, but here in the South it’s just a way of life! Plus, they’re seriously delicious. Seriously, y’all. You gotta try it!

I washed the zucchini off and shredded it using a cheese grater. Zucchini have an extremely high water content, so it’s important to try to squeeze out all of the water that you can.  For this recipe I used 2 zucchini, and it made about 2 cups worth when shredded.

I combined the remaining indredients (found below) with the zucchini and formed the zucchini mixture into thin patties. I fried them in a skillet for roughly 1 minutes, flipped them over halfway through cooking.

Zucchini & Feta Cheese Fritters

Ingredients

  • 2 medium zucchini
  • 1 cup crumbled feta cheese
  • 1/4 cup shredded Parmesan cheese
  • 2 eggs
  • 1 Tbs parsley
  • 1 Tbs dill
  • 1/2 tsp minced garlic or one clove- minced
  • 8 Tbs all purpose flour
  • 1 Tbs baking powder
  • Salt & Pepper a few shakes of each
  • Vegetable Oil for frying

Instructions

  • Grate zucchini and place in a strainer
  • Squeeze out as much of the liquid from zucchini as you can and set aside
  • In a large bowl, beat eggs and cheese together
  • Add in zucchini, dill and parsley and stir
  • Add in flour, 2-3 shakes of salt and pepper and baking powder and stir
  • Heat oil in a skillet on medium (I used about 1/2 cup, but it really depends on the size of your skillet)
  • Take a small handful of mixture and pat it out in your palm as thin as you can without it falling apart
  • Fry in skillet for roughly one minute,or until outside is golden brown. Be sure to flip to make sure each side is cooked
  • Remove from skillet and let cool on drying rack or on paper towel
  • Can be served with marinara sauce or ketchup
  • Enjoy!

My husband and I really enjoyed eating the fritters with a little bit of ketchup, and we’ve also eaten it with marinara sauce. The key when making this recipe is to get the fritters pretty thin, because you want to make sure the insides get cooked all the way through. The first time we ever made them we made a few patties that were pretty thick, and unfortunately the outside cooked way faster than the inside and we were left with a gooey center. We definitely learned from that mistake!

Bacon and Cream Cheese Pesto Bites

Last week I made these absolutely divine mini taco bites using filo cups. I had actually never used filo cups before, but after spotting them in the freezer section at my local grocery store, I thought I’d give them a try! I was originally attracted to them by the idea that you can use them for pretty much anything. You can make desserts, appetizers, or even a meal out of them if you really wanted to! They’re golden, flaky and oh so tasty!

I picked up two packages, one for the taco bites and the other to use for anything that popped into my mind. I was baking in my kitchen one afternoon and noticed that the recipe I was using called for only half a brick of cream cheese. I had already let the cream cheese soften, so I needed to come up with another use for the cream cheese soon.

How to Freeze Fresh Tomatoes

I absolutely love a plump juicy tomato. There was a time in my life when I wasn’t a huge fan of them (unless it was in salsa and maybe a small sliver on a burger), but I credit my husband for getting me to eat them more frequently over the past few years. We planted a few tomato plants in our garden this year and we’ve been fortunate enough to have several produce. In fact, they’re producing a little bit faster than I can eat them!

Earlier this week my grandmother sent me home with a sack full of beautiful tomatoes. I had a few already sitting in my window that really needed to be eaten, but you just don’t turn down fresh tomatoes! So I decided to “put them up” as we say in the South. I really wasn’t interested in canning them, so I went the easy route and prepared them for the freezer.

Jalapeno Peach Pepper Jelly Recipe

When we planted our garden this year, one of the first things on my garden-wish list was pepper plants. I love cooking with bell peppers, and I especially love to add the heat of jalapenos to many meals that I prepare. My husband and I prefer our food on the spicier side, so we grabbed quite a few pepper plants. My mother in law makes this fabulous dip using pepper jelly (which I LOVE), and I knew that taking a stab at making my own pepper jelly was a must for this summer.

Once we started planting the plants, my husband realized that he accidentally picked up a carton of dragon cayenne peppers instead of the jalapeno peppers that we intended to get. I didn’t know much about dragon cayennes, but we decided to go ahead and plant them anyway and that my husband would pick up the jalapeno plants the next time he went to town.

Jalapeno Peach Pepper Jelly - This recipe uses 3 different type of peppers, but you can easily substitute them to whatever you like. It has the perfect amount of heat and is AMAZING on just about anything!…

Bomb-tastic Blackberry Brownies with a Sweet Berry Glaze

Happy 4th of July weekend to all! I absolutely love this time of year. Everyone is cooking out on the grill, enjoying the outdoors, sippin’ on sweet lemonade and devouring the delicious fruits and veggies that grow in our summer gardens.

Mmmm. I can smell the hamburgers and apple pie cooking right now! Ok, maybe I’m just daydreaming over here, but it won’t be long before I get to enjoy those sweet summertime smells!

I DO smell something amazing filling the air of my home as I type this, though. I just took this beautiful batch of Bomb-tastic Blackberry Brownies out of the oven! Boy, aren’t they just heavenly? I’ve heard of people incorporating different things into their brownies to make them “healthier”. This recipe certainly isn’t healthy, but I figured if other people could put black beans and avocados in their brownies, then by golly I could put blackberries in mine!

I’ve never been one to love the heat and humidity, but one place that I love to have a little heat is in my food – especially BBQ and all the fixin’s!
