Last week you saw me whip up a lip-smackin’ good blackberry plum cobbler, and my first bite into those fresh summertime fruits was all I needed to earn my first class ticket on the cobbler crazy train. I’ve been cooking up a storm this past week, and cobblers have definitely been number 1 on the list! This Homemade Apple Cobbler hits all the marks on the comfort food scale, and a scoop of ice cream on top really makes me wish it was summer all year long!

Fruity Pebble Marshmallow Treats

May 24, 2020 by Laura Tucker Leave a Comment

These Fruity Pebble Marshmallow Treats are a sweet dessert to indulge in, and they are perfect for kids to grab and go during the busy back to school season!

Fruity Pebble Marshmallow Treats

There’s no denying it – I am and have always been a major Rice Krispie Treat fan. As a 90’s kid, there’s just something so nostalgic about opening up that shiny blue wrapper and unveiling that delicious golden treat that takes me right back to my elementary school days. Even though the prepackaged ones are delicious, my heart knew even as a child that nothing, not even store bought, could rival a homemade krispie treat. Recently when I posted my recipe for White Chocolate Peanut Butter Rice Krispie Treats, it opened up a whole wide world in my brain of things I wanted to try with them.

Fruity Pebble Marshmallow Treats

Now, Fruity Pebble Marshmallow Treats are certainly not a new or unique idea. In fact, you’ve been able to buy them in stores and online for several years now, but knowing that nothing rivals homemade, I just had to share a recipe with you all for these fun and colorful Rice Krispie Treat relatives. With the school season starting up for so many across our country, these are a perfect back to school treat that will make snack, lunch, or after-school snack time a yabba-dabba-doo time! 😉

Fruity Pebble Marshmallow Treats

Fruity Pebble Marshmallow Treats are made identical to how you would make traditional Rice Krispie Treats. All you need is a little butter, a bag of marshmallows and a box of Fruity Pebbles! (And don’t worry – the generic of all those ingredients work just fine!)

Here’s a free printable copy of the recipe if you’d like to give it a try:

Course: Dessert

Ingredients

  • 1 10 oz package Miniature Marshmallows
  • 6 cups Fruity Pebbles or generic version
  • 3 Tbs butter

Instructions

  • In a medium saucepan, melt butter over medium-low heat
  • Add in marshmallows 1 handful at a time and stir with a wooden or slotted spoon until all marshmallows are completely melted
  • Pour melted butter and marshmallows over cereal and stir until well combined
  • Pour mixture into a casserole dish and allow to set until firm

Notes

Lightly spray your hand or the back of a spoon with nonstick cooking spray and gently press the fruity pebble treats into all corners of the pan to ensure the treats will be nice and even. The cooking spray will keep the treats from sticking to your hand.

Apple Brownies

May 21, 2020 by Laura Tucker 1 Comment

In my opinion, some of the very best recipes are the ones that call for very few ingredients. This no-frills recipe for Apple Brownies that I found in an old church cookbook may be a little bare-bones, but it’s arguably better than any of those fancy pants magazine-worthy brownies you pin on Pinterest with 30 ingredients that you know you’ll never make. You likely already have everything you need to make these brownies on hand, and the little pieces of fresh diced apple that are tucked all throughout these brownies really take them to a whole new level!

DIY Triple Chocolate Easter Bunny Dessert

April 1, 2020 by Laura Tucker Leave a Comment

This DIY Triple Chocolate Easter Bunny Dessert is the perfect treat to celebrate the spring season with. Just grab a spoon and bottoms up!

We’re hopping right along into the spring season, and my heart has been thumping over all of the beautiful new green foliage, gorgeous pastel colored flowers and the brisk cool morning air. Spring has always felt so refreshing to me, and seeing what has withered away regain  new life and come into bloom is such a testament of the beauty of the season.

We built our home in a very wooded area, and each morning our yard comes to life with beautiful creatures and critters coming out to play in the blanket of morning dew on our lawn. My two girls have grown particularly fond of the wild rabbits we have that wrinkle their noses as they munch on the Bahia grass. We are big fans of the Easter bunny, and my daughters giggle with delight each time they see the store shelves flooded with those cuddly stuffed bunny rabbits and giant packs of pastel colored eggs.

Whew, what a week the world has had. Knowing we’re all currently getting our fill of the negative things happening across the globe, I’m trying my hardest to cling to things that are good. Keeping my mind occupied and busy on the things I enjoy most has helped me cope with this weird seismic shift, and having a little chocolate in my system certainly helps me keep my mood more positive.

My life needed something sweet, and these Chocolate Mint Brownies that my sister once made had been on the brain for quite some time.

Mardi Gras King Poke Cake

February 14, 2020 by Laura Tucker 4 Comments

This recipe for Mardi Gras King Poke Cake is a fun twist on the classic dessert, and the cinnamon filling and cream cheese frosting make this a cake truly fit for a king himself!

Laissez les bon temps rouler! Fat Tuesday is drawing near, and it’s been a true Mardi Gras party in my head as I’ve been brainstorming how I can incorporate my second favorite cake in the entire world – King Cake – into as many fun new recipes as I can. Making a true from-scratch King Cake is a labor of love. It requires a little bit of TLC and elbow grease, and when a King Cake craving hits me in the middle of the day, it isn’t exactly feasible to just whip one up on a whim.
