My mother-in-law has a few beautiful blueberry bushes that are finally producing ripened blueberries. My youngest daughter could eat blueberries all day long if you let her, so having fresh blueberries on hand straight from her grandmas garden has been a real treat.
I love cooking with fresh berries during the summer months. It’s not very often that I cook with blueberries because my daughters eat them so quickly, but now that we have an abundance of them I was finally able to put my apron on and come up with a little something to satisfy my sweet tooth.
When it comes to making cakes, I’m honestly not huge on icing. In my opinion, some of the very best cakes are the ones without any icing at all! This blueberry cream cheese cake is loaded with fresh blueberries that make this cake perfectly moist, and the slightly crunchy layer on the outside is my absolute favorite part.
I may get my southern card revoked for this one, but I avoid cooking with shortening as much as I can. I am personally not a fan of it, and there are definitely healthier options out there. However, the only reason that I keep a stick of Crisco in my pantry at all times is for greasing my cake pans. To me there is nothing that comes close to working as good as Crisco does when greasing a cake pan, and it helps create a nice, thin and crunchy layer on the outside of the cake. Once you grease your cake pan, you’ll need to dust it with either flour or a little powdered sugar to create a barrier between the melting shortening and the cake. This also helps in giving the outer layer that nice crispness.
Adding the cream cheese make this cake extra decadent – you’d never know this is actually a “shortcut” cake! Utilizing boxed cake mixes is a great way to save time and cut back on extra ingredients in the kitchen, and I always make sure I have some on hand.

Blueberry Cream Cheese Cake
Ingredients
- 1 Package butter flavored cake mix
- 3 eggs
- 8 oz cream cheese softened
- 2 cups blueberries fresh or frozen
- 1/2 cup vegetable oil
- Shortening + flour or powdered sugar for greasing and dusting pan
Instructions
- Preheat oven to 325 F
- Generously grease a tube pan using shortening and dust with flour or powdered sugar to create a nonstick surface
- Combine bake mix, eggs, cream cheese and vegetable oil and beat until smooth.
- Fold in blueberries
- Pour batter into greased tube pan and bake for 1 hour, or until toothpick inserted into the center of the cake comes out clean
- Enjoy!
