Spinach Walnut Pesto Recipe

Have you ever had a surplus of something in your fridge and you were left wracking your brain trying to figure out WHAT in the world you were going to do with it? Last week we had a church function where we were to bring salad and all of the fixings to feed a large crowd. I purchased a few heads of lettuce and my mother in law purchased several big packages of spinach. We actually wound up with a good bit more food than we needed, so we were left with all of the spinach to take home.

I feel like I’ve been up to my ears in salad here lately because of this spinach surplus. I’ve been eating spinach salad for a few days now, so I’m definitely ready to move on. Since spinach has a pretty short shelf life, I knew I needed to get busy finding other ways to incorporate it into our meals.

I’ve been making big plans, y’all. I’ve been daydreaming and taking notes about ALL of the delicious foods that are going to make an appearance on our Thanksgiving dinner table this year, and I seriously cannot wait! There are certain Thanksgiving foods here in the South that you just don’t pass up on. You’ve got your deviled eggs, your casseroles of every flavor, your buttered roll or biscuit, and your slice of sweet potato pie to polish everything off. Simple Slow Cooker Chicken Taco Soup

The leaves are falling on the ground here in my neck of the woods, and the temps are starting to cool off nicely in the afternoon. Cold weather is coming, y’all! I can feel it! It won’t be long and we’ll officially break out the jackets, boots and long sleeves and bask in all of Autumn’s glory. I. Can’t. Wait!

And with the coming cooler weather, it’s time to start breaking out the slow cooker and start dusting off those recipes for soups, stews and chili! Mmm, I could eat that sort of thing all year long! (I can’t even tell a lie, y’all. I DO eat it all year long!)

Slow Cooker Chicken Taco Soup - a simple recipe that's perfect for a winter time meal!

So with zero hesitation, I broke out my slow cooker and decided that we were definitely having some taco soup for supper. It’s such an easy meal to throw together, and it’s so delicious and soothing on a cold winter day! My family typically uses ground beef in their taco soup, but I like to use a little chicken in mine every now and then. It’s SO good!

Here’s a copy of my recipe for you to save. As far as the ingredients go, you can get as creative as you like! We love to use chick peas in addition to chili or kidney beans from time to time because of their amazing health benefits, but feel free to use whatever sort of bean that you like!

Simple Slow Cooker Chicken Taco Soup

Ingredients

  • 2 large chicken breasts
  • 2 cups chicken broth
  • 1 15 oz can of corn drained
  • 1 15 oz can red kidney beans
  • 1 15 oz can of chick peas or your other favorite bean - drained
  • 2 15 oz cans of diced tomatoes
  • 1 small onion - diced
  • 1 packet of taco seasoning
  • Optional taco soup toppings: Tortilla chips sour cream, shredded cheese, cilantro etc

Instructions

  • Combine all ingredients (except taco soup toppings) in a slow cooker and cook on low for 6 hours.
  • With 30 minutes cook time left remaining, remove chicken breasts and shred with a fork. Return to slow cooker and let simmer.
  • Serve with your favorite toppings

Another great thing about this dish is that it freezes really well. If you have a good bit of leftovers, store it in a freezable container and just pull it out and thaw the next time you’re ready for it!

Cinnamon Stewed Apples

This recipe for cinnamon stewed apples is one of my favorite comfort foods of all time. With a scoop of ice cream on top, you’re in for a real treat!

It may still be 95 degrees outside here in Alabama, but make no mistake about it, there’s a nip in the air! Truthfully,  all I mean by that is that the humidity has just slacked off a good bit and it doesn’t feel like a sauna outside, but I’m pretty sure most of us Alabamians would probably classify that as a nip! 😉

And when I feel Fall in the air, I waste no time getting in the Falliday spirit! One of my favorite ways to jump into the season is to fill my home with the aroma of all of those glorious cinnamon-y spices, and it’s a total bonus if those smells just so happen to be coming from my kitchen!

Cinnamon Glazed Stewed Apples

 

One of my favorite Autumn-inspired dishes is cinnamon stewed apples. It’s simple, delicious, and BOY does it make your house smell amazing when it’s simmering in the pot!

One of my favorite grocery stores was recently cleaning out their produce section and was marking down produce that they needed to move out quickly. I stumbled upon a bag of mixed apples marked down to just 99 cents, and I knew right away that stewed apples were definitely happening as soon as I got home!

Once I unloaded the groceries and put the baby down for a nap, I washed and peeled 3 of the apples.  I got out my handy dandy apple slicer and had the apples chopped and ready to stew in seconds!

Next, I got out my favorite skillet and thew in the apple slices with a little dab of butter. I cooked the apples on medium-high heat for about 5 minutes until they were nice and tender.

Once the apples were done, I removed from heat and added in flour, sugar, all spice and cinnamon. I gave it a good stir and let it sit for a few minutes, just enough to get that beautiful, thick and delicious glaze over them!

Stewed Apples

Ingredients

  • 3 Apples - peeled cored and sliced
  • 3 Tbs butter
  • 1 Tbs flour
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 cup sugar

Instructions

  • Peel, core and slice apples.
  • In a large skillet, melt butter and toss in apples. Allow to cook on high for roughly 5 minutes until apples are tender but not mushy. Stir frequently while cooking.
  • Remove from heat and add in flour, cinnamon, allspice and sugar and stir until well combined. As the apples cool, a thick glaze will form.
  • Serve immediately while warm - best over vanilla ice cream!

Alright, y’all. Ready or not, it’s back-to-school time! (I can’t even believe I’m saying that. Where did the summer go?!) While many of you may be a little bit giddy on the inside to send your kiddos off to school, the harsh reality of getting back into a routine and struggling to balance time amongst different extracurricular activities may seen a little overwhelming.

“How am I going to manage my time? How will my kids adjust? What in the world will I pack in their lunch boxes? Where ARE their lunch boxes? What can I fix for supper on the fly that’ll please everyone?”

If you find yourself asking those questions, you’re not alone. I promise! This time of year is just so darn busy. While I can’t necessarily answer all of those questions for you, I think I can definitely help you out with a few of them! Just sit back, relax and read along. Remember: You got this!

Since it’s always a little difficult to find ways to juggle different activities, balance our time and find a way to muster up the energy to get it all done, it’s important to simplify certain areas of our day the best that we can. When it comes to meal and snack time, sometimes the things we fix often wind up being a total afterthought. I’ve been there.

Your creative juices are completely depleted by the end of the day and the most inventive thing you can come up with is to throw some cheese on some noodles or microwave some chicken nuggets and just call it a day. Besides, you really didn’t have time to do much else anyway. And there are other times when we feel like we need to cook a 5-star meal for the family and then get disappointed when we didn’t have time to do it. It’s easy to over-complicate things when we’ve suddenly become busy.

But it doesn’t have to be that way, y’all! Let me explain a little further: I’ve got a recipe for you that your WHOLE entire family will love. It’s easy, it can be made ahead of time, it makes plenty of leftovers, you can easily pack it for lunch AND you can even eat it with your hands. Sounds like a winner, right? These Spaghetti Bombs are TOTALLY winners, and you’re going to love them. I guarantee it!

These two little gems are staples in my pantry year round, but they’re especially valuable to me during this time of year. They’re the stars that make this particular recipe shine, and they’re huge time/life savers during the back-to-school season.

Prego Italian Sauce is, by far, my favorite pasta sauce on the market. As much as I’d love to make a homemade pasta sauce for my family, it ain’t happening. Seriously, who has time for that?! Prego is the closest tasting thing to homemade I’ve ever tried, and it’s blend of sweet and savory flavors are just perfect for my family. I also love to keep a variety of V8 juices on hand because they help sneak in extra fruits and veggies into our diet that we may not be getting otherwise. Have you seen the V8 + Energy varieties? They’re the bomb, y’all! They give me a little boost of natural energy (derived from green tea) to help me conquer the world (or, at least back-to-school time.) 😉

You can easily find these two items and other Campbell’s products at your local Walmart. Make sure you stock up as you’re out and about getting your back to school shopping done! (And don’t forget to print the coupons found at the bottom of this post!)

Alright, alright. Enough chit-chat. Whaddya say we get started making these spaghetti bombs. I’m starting to get hungry! 😉

First, start out by boiling an entire box of spaghetti noodles. In a separate bowl, scramble two eggs  and mix in some shredded cheese and melted butter. While those noodles are cooking, pull out another sauce pan and combine a package of frozen meatballs with a jar of Prego Italian Sauce and cook over medium heat.

You’ll also want to spray two 12 count muffin tins with a non-stick spray and preheat your oven to 350 F while your noodles are cooking. Once the noodles are done, drain them and immediately combine them with the egg and cheese mixture. Stir well until the noodles are completely coated. Using a fork, scoop the noodles into each muffin compartment. Give the fork a swirl to create a “nest.”

In a separate bowl, combine a container of ricotta cheese with a blend of your favorite shredded cheese. Scoop a spoonful of this mixture onto each nest. Add a meatball to each one and then top with a little mozzarella before throwing them in the oven to bake for 25 minutes. When I think of foods that you can eat with your hands, spaghetti has definitely never come to my mind before. Normally, spaghetti would be something that I could never pack in a lunch box  to take to school. It isn’t exactly a portable “on the go” meal, and it isn’t a meal that my family gets particularly excited about.

But that’s exactly why I love these spaghetti cups. They defy all of those rules and things we previously thought about spaghetti before. I can pack these in a lunch box. They can be eaten with your hands on the go. My family is excited to eat them because they’re so different from normal, boring spaghetti. I can throw this together on a busy weeknight, and I can make them ahead to save on time. Since this makes such a large batch, I often reserve some of the noodles and meatballs in  separate containers and just pull them out of the fridge and pop them in the oven as needed. Easy!

Spaghetti Bombs

Servings: 24 spaghetti bombs

Ingredients

  • 1 package spaghetti noodles - cooked I used "thick" spaghetti noodles
  • 2 eggs uncooked and scrambled in a bowl
  • 5 Tbs melted butter
  • 1 cup of your favorite shredded cheese blend divided (I used an Italian blend)
  • 1 15 oz container ricotta cheese usually found close to the sour cream
  • 1 24 oz jar of Prego Italian Sauce
  • 1 small package of frozen meatballs
  • 1/2 cup mozzarella cheese for topping

Instructions

  • Preheat oven to 350 F
  • Cook spaghetti noodles according to package instructions, drain
  • In a saucepan, combine meatballs and Prego and heat
  • Spray 2 muffin tins with non-stick cooking spray
  • In a small bowl, beat eggs and add in 1/2 cup of your favorite shredded cheese + melted butter
  • Pour egg.cheese mixture over freshly cooked noodles and stir to coat
  • Using a fork, scoop a few noodles into each muffin tin compartment and "twirl" to create a nest
  • In a separate bowl, combine ricotta cheese and 1/2 cup of your favorite shredded cheese and mix well
  • Spoon about a tablespoon worth of cheese mixture into the center of each spaghetti nest
  • Place one meatball on top of ricotta cheese and sprinkle with a little mozzarella cheese
  • Bake for 25 minutes
  • Serve with additional sauce if you'd like
  • Enjoy!

The Secret to the BEST Country Fried Steak: Venison Edition

When you think about your favorite comfort foods, what comes to your mind? A lot of people love a creamy bowl of mashed potatoes, or even a cheesy pile of homemade macaroni and cheese. Maybe it’s something as simple as a grilled cheese sandwich! I’ll admit that I have a pretty extensive list of comfort foods, but one of my favorites that makes the tippy top of the list is Country Fried Steak.

Country fried steak goes by many different names. Some call it “chicken fried steak,” while others call it “cube steak.” There may be a few differences in the three, but if you ask me it’s all basically the same tasty goodness! Most people make it with beef round steak, but my family is all about the venison. My mother in law recently taught me how to cook this dish, and I’m pretty darn certain that she makes it better than anyone on the entire planet. Aside from her wonderful cooking skills, her secret to making perfect country fried steak is in one seemingly unusual little tool. So grab a cold bottle of Coca Cola and sit a spell. Taco Stuffed Summer Squash Boats

Remember last week when I was getting a little creative in the kitchen trying to utilize all of the fresh summer squash that’s filling up my garden? (If you don’t remember, I made a lemon poppy seed cake with the squash and it was AH-mazing.) 🙂

Well, here I am once again trying my hardest to find new and creative ways to use up some of this beautiful squash that’s taking over. I feel like the past few summers the only things I could think to use it for was in fritters, casseroles, and just cooked plain with a little EVOO and salt. I mean, those are all super yummy ways to eat yellow squash, but this summer I’m just feeling like I want something a little extra. Know what I mean?

So when I went out to the garden this afternoon to pick all of the squash that was ready, I had a brilliant idea hit me! Why not try my hand at stuffing the squash? After all, I make stuffed peppers ALL the time! Well, upon further inspection of the size of my squash, I decided that cutting them in half and hollowing them out would probably work a little better than truly stuffing them, but it’s all the same really!

As a lover of all things Mexican food, I knew that fiesta-fying these bad boys was a must. Thus, the idea for these Taco-Stuffed Summer Squash Boats was born! De nada, mis amigos. 😉

Walnut Basil Pesto – A Must Have for my Family!

Without question, the hands-down favorite dish that I prepare for my family is my Turkey Pesto Sliders with Brown Sugar and Poppy Seed Glaze. They’re insanely delicious, but they call for an ingredient that has proven to be a little bit difficult to find in my neck of the woods:

Walmart definitely doesn’t carry it here. I’ve searched high and low at multiple stores trying to find a jar of the stuff, but I’ve never been successful in that endeavor. My Publix carries it, but they’re 45 minutes away from my house. Plus, the only place I’ve been able to find it there is on a tiny little table tucked away in the produce section along side a few other specialty spices and spreads. I was happy buying it there, but I always felt so nervous that one day I’d walk in and they wouldn’t carry those specialty goods any more.

In fact, one time they rearranged their produce section and removed the table with the pesto (without even consulting me first…so rude!) I thought for SURE that they had stopped carrying it. I almost had a conniption fit right there in front of the tomatoes and everybody! But I eventually found it on a little end cap nearby and bought almost every jar they had on the shelf out of fear and partial embarrassment. I don’t play when it comes to my pesto, y’all! Blackberry Cream Cheese French Toast Casserole

May is my favorite month for so many reasons. The weather here in South Alabama is as close to perfect as it can get. It’s cool in the mornings and afternoons, which makes it perfect to be able to enjoy the outdoors. Also, it hasn’t gotten humid or muggy yet, which is a huge plus for me (and my hair!) This is the month where it’s still comfortable to sit out on your front porch, go for a walk and even pick a few wild berries with your family.

There’s a huge patch of wild dewberries right up the road from my house that are always begging to be picked during this time of year, so my husband and I like to grab a giant bowl out of the cupboard and make an adventure out of it!
