We’re officially counting down the days until our oldest daughter heads off to her very first day of pre-kindergarten, and my mind has been racing non-stop making preparations for the busy back to school season! We’ve been working our way through school supply lists, labeling clothing and accessories, planning out our teacher gifts and stocking our refrigerator and pantry with all of the staples we’ll need to make it through the upcoming few weeks. Aside from being able to take trips down to the beach or finding a pool to splash in, sometimes I think there aren’t too many redeeming qualities to the heat and humidity we experience here in south Alabama. The hot, sticky air that hits you in the face when you open the door to step outside often feels like it sucks the wind right out of you, and it’s the perfect kind of weather for mosquitoes to come out and play. Just when I start to turn into a grump about the heat, I smell the aroma of the grill that my husband just fired up and I’m quickly reminded of one of the biggest reasons that I really do love the summertime!

If you had told me a year ago that I’d be sharing a recipe for Cajun Seared Scallops, I would’ve thought you had absolutely lost your mind. To tell you the truth, I’ve never been a seafood lover. Even though it’s technically still spring, this 90 degree weather we’re having is giving us every indication that this summer is going to be a scorcher. As far as food goes, there are few things more comforting to me than a fresh, homemade pizza loaded with your favorite toppings. When my husband and I were in college, we both worked together at a pizza chain to help pay for our engagement rings and wedding expenses. I didn’t work there long enough to move on to the “make line” where we actually got to assemble the pizzas for customers, but I did learn a few techniques about what goes into making a pizza really great. My husband, on the other hand, stayed until he graduated from college. He became an assistant manager and was a boss at making the best pizza and calzones I do believe I’ve ever tasted. Aside from the heart that goes into making a pizza from scratch, the one ingredient that ties it all together and makes it so comforting is definitely the cheese – no doubt about it!
