Casseroles & Comfort Foods

Squash & Onions

May 30, 2020 by Laura Tucker 1 Comment

Old school southern recipes have a way of speaking to my soul like no other. This recipe for classic squash and onions has been a lifelong favorite of mine. Enjoy!

My husband and I have been tending to our summer garden for the past few months. For the first time ever, we planted everything from seed and have been learning how to tend to each plant carefully. We’ve made a few mistakes along the way, and not all of our seeds made it, but we’re blessed to have 24 beautiful, strong and blooming squash and zucchini plants that will be fully producing within the next week or two. The squash I used in this recipe actually came from my latest Misfits Market Box, which is a fresh produce subscription service you can read more about here!

Out of all the beautiful seasons we experience here on Earth, there is one that ranks supreme in my book for many, many reasons. Sure, summer and fall are great, but football season is what really gets me excited. We’re just a few days away from the Big Game, and I’ve already got our game day spread all mapped out to make sure we’re celebrating game day right.  No matter who wins on the field, the true MVP of game day is sitting right on our plates!

20 Black Eyed Pea Recipes to Rock your New Year

December 30, 2019 by Laura Tucker Leave a Comment

Try these 20 Black Eyed Pea Recipes to Rock your New Year in 2020!

I may get a little side-eye for even having the gumption to make a statement like this, but black eyed peas just aren’t my favorite thing in the world. Honestly, if black eyed peas fell off the side of the earth I wouldn’t be the least bit sad about it. That may sound a little harsh, but they’re not the most flavorful of the legume family and they’re certainly not winning any brownie points with me for visual appeal either. For whatever reason, us southern folk feel the need to force ourselves to eat a heap of them on New Year’s Day for good luck, prosperity and because our Mama told us to, but I have a feeling I’m not alone in my distaste for them.

Truthfully, they wouldn’t be so bad if they just has a little more va-va-voom. You know, a little zing to them. They always end up looking a little slimy cooped up on the side of my plate on New Year’s Day, and I’m always left wondering exactly how many black eyed peas I need to consume before I get all the good luck points.

Turkey and Dressing Stuffed Egg Rolls with Cranberry Dipping Sauce

November 20, 2019 by Laura Tucker Leave a Comment

Ah, good ol’ turkey and dressing. ‘Tis the season for this classic Thanksgiving side dish to grace our tables and dinner plates, and I’ll be the first in line to plop a heaping of it on my plate on Thanksgiving day! Dressing can be quite a controversial topic, especially here in the south.  Much like the long running soda vs. pop debate, the country seems to be a bit divided on the proper name for this dish. Some say stuffing, and some say dressing, and while there technically is a difference, it’s minor. Stuffing is cooked inside a bird, and dressing is cooked inside a pan. No matter how you prepare it, all I know is that I want a whole bunch of it!

These Turkey and Dressing Stuffed Egg Rolls with Cranberry Dipping Sauce are the perfect twist to the classic Thanksgiving dish, and they're bursting with flavor from a smidge of Better Than Bouillon! #ad #HolidaysWithBTB #BTBHolidayRecipes #IC…

While everyone has already begun decking their halls with Christmas decor, I’m over here loosening up my belt in preparation for Thanksgiving dinner. Thanksgiving is my favorite holiday to celebrate, and the types of foods that are always present on the table are some of my favorite dishes that ever existed. I’ve never met a casserole that I didn’t like, and sweet potato casserole ranks pretty high on my bracket of Thanksgiving menu favorites!

Cheesy Ham and Mashed Potato Trifles

November 13, 2019 by Laura Tucker 1 Comment

This is a sponsored conversation written by me on behalf of Smithfield®. The opinions and text are all mine.

The final two months of the year always seem like a bit of a whirlwind. All of the hustle and bustle of the busy holiday season keeps our schedules pretty full, and it often leaves little or no time to dedicate to crafting those home-cooked meals that my family craves at the end of a long day of school and work. I frequently find myself scratching my head trying to find a meal that both the adults and children will love, and it’s always a bonus when the meal can come together in 30 minutes or less!

My oldest daughter has officially completed her first 3 weeks of school, and it’s gone much more smoothly that we could have ever imagined. The faculty and staff has been absolutely wonderful and have done everything they can to make this transitional period smooth for us, and their communication with the things going on at the school has been fantastic!
