It’s no secret that I’ve been doing a lot of baking lately. A scroll through my most recent posts will fill you in on how much I’ve been indulging in the sweeter things in life, and my body has been sending me a few clues that it’s time I fill her up with something that leans a little more towards the healthy side. One of my favorite ways to get in those fresh greens and veggies is to serve them taco style – and in this case, Cilantro Lime Chicken Taco Bowl style!
I recently added a not-so-secret weapon to my kitchen arsenal that I have been crazy about, and it’s been adding such a smooth and flavorful tone to the vegetables and meat I’ve been preparing for my family all week long. Friends, if you don’t hear anything else I’m saying to you in this post, hear this:
Invest in a good, high quality and minimally processed olive oil. It is a game changer!
I’ve been using Secolari Cilantro Olive Oil, and it really brings out some seriously amazing flavors in this cilantro lime chicken taco bowl. The oil is cold pressed using the Agrumato method, meaning the olives and fresh cut cilantro are pressed at the same time without the use of heat, ensuring that the oil and herbs extracted has a better quality taste and the nutrients remain intact.
When preparing the chicken for these taco bowls, I allowed the meat to marinate in a lime, cilantro and olive oil blend before cooking. The Secolari Cilantro Olive Oil gave the chicken a nice overtone of lemon, sage and pepper, and it enhanced the cilantro added to the marinade to give this a nice fiesta-type flair to the dish.
As much as I like to break out the outdoor grill to cook my chicken, our area has been dealing with a pretty annoying lovebug infestation lately. I wasn’t willing to risk those pesky flies trying to get in on my cilantro lime chicken action, so I kept the cooking inside on a grill top surface on my stove. After cooking the chopped chicken for a few minutes on each side, I was able to get a nice char on the tips before tossing it into my taco bowl with my favorite fresh veggies.
The great thing about making these cilantro lime chicken taco bowls is that there really isn’t a wrong way to make them. The possibilities are truly endless when it comes to what you can add to them! In this bowl, I added fiesta corn, chopped red onion, black beans, roasted pepitas, fresh jalapeno, my favorite salsa, avocado, cilantro and a squeeze of lime juice.
Cilantro Lime Chicken Taco Bowls
Ingredients
- 2 lbs boneless skinless chicken breast cut into small pieces
- 2 Tbs Cilantro Olive Oil Secolari
- 1/2 cup fresh lime juice
- 1 small handful fresh cilantro chopped
- 1 1/2 tsp minced garlic
- 1 Tbs honey
- 1/2 tsp salt
Taco Toppings
- Fiesta Corn
- Black beans drained and rinsed
- Salsa or Pico de gallo
- chopped onions
- Roasted Pepitas
- Fresh Jalapenos
- Fresh Avocado
- Cilantro
Instructions
- In a large bowl, combine chicken pieces, Secolari Cilantro Olive Oil, garlic, lime juice, honey, salt and cilantro and stir until well combined
- Allow chicken to marinate for at least 1 hour
- Season a stove top griddle or skillet with a smidge of olive oil
- Heat to medium-high heat and add chicken to hot pan, cooking on each side for 2-3 minutes, or until chicken is cooked all the way through
- Transfer cooked chicken to a bowl and add your favorite toppings
- Enjoy!
