Ah, good ol’ turkey and dressing. ‘Tis the season for this classic Thanksgiving side dish to grace our tables and dinner plates, and I’ll be the first in line to plop a heaping of it on my plate on Thanksgiving day! Dressing can be quite a controversial topic, especially here in the south. Much like the long running soda vs. pop debate, the country seems to be a bit divided on the proper name for this dish. Some say stuffing, and some say dressing, and while there technically is a difference, it’s minor. Stuffing is cooked inside a bird, and dressing is cooked inside a pan. No matter how you prepare it, all I know is that I want a whole bunch of it!
If you’ve been following along here lately on Southern Made Simple, you may have noticed I’ve been on an egg roll kick. It brings me so much joy to take traditional and classic dishes and put a fun and fresh new twist on them, and rolling up a spoonful of turkey and dressing and serving it up egg roll style has got to be my favorite culinary creation this year. While dressing takes on a slightly softer texture, pairing it with the crispy crunch of an egg roll wrapper really takes this dish over the top!
Everyone and their grandmother has their own family recipe on how to make dressing. Some make it with cornbread, some with loaf bread, and some even prepare it with a pre-packaged mix. To tell you the truth, the latter is my favorite bread to use. Shh, don’t tell grandma! I’m all for keeping things simple in the kitchen, and I believe you can achieve big flavors without all the fuss, and fuss is something I definitely don’t want to serve come Thanksgiving day!
To bump up the flavor a few notches in my dressing, I use Better Than Bouillon Roasted Turkey Base, a paste concentrate that is equivalent to a bouillon cube or broth. I find that using it adds that “cooked all day” flavor to my dressing, and there’s multiple flavor varieties to choose from! (Click here to see more varieties and to find it at a store near you.)
Since my oven is always in high demand on Thanksgiving day, I like to utilize my other appliances where I can to make sure everything will be cooked and ready to go in time for dinner. I make my dressing in a slow cooker by simply adding 2 turkey tenderloins, 2 heaping tablespoons of Better Than Bouillon Roasted Turkey Base, 4 cups water, diced onions and celery, and 3 boxes of turkey flavored stuffing mix. Easy peasy and crazy good!
I’ll be divvying up half of the dressing and serving it in a side dish, but the other half will be rolled into egg rolls for people to enjoy as a little something different. Once the dressing is cooked thoroughly, set a little aside and let it cool. Scoop a spoonful of it into the lower center of a wrapper, roll and fold the edges and cook in a deep fryer heated to 350 F for 3 1/2 minutes.
Transforming turkey and dressing into egg rolls is also a great and creative way to use up leftovers! I love to dip them into a pureed cranberry sauce, since turkey and cranberry sauce go together like peas and carrots. 😉
