Mother’s Day is coming up this weekend, and to celebrate my family is taking a little day trip down to the gulf to have a little fun in the sun! Now that I’m in my 3rd trimester, it’s not quite as easy to get out and do things like it was just a few months ago. Since I’m in the home stretch of this pregnancy, I knew it was important for my family to get out and have fun together as much as possible before we grow from a family of 3 to a family of 4! Needless to say, I’ve been up on my feet these last few days making a list (and checking it twice) to make sure we don’t forget anything while packing – because a trip to Walmart during a vacation sounds absolutely dreadful to me!

A few months ago I shared a simple recipe for guilt-free southern fried chicken, and since that time it has exploded in popularity more than I ever imagined! Air Fryers are wonderful kitchen inventions that allow you to cook your favorite foods without deep frying, and their uses span far beyond fried recipes! In fact, most air fryers come with accessories that allow you to bake, too! I’ll be the first to admit that I’ve been going a little bit crazy over the past few weeks. My mind has been on overdrive as my family and I have been putting the final touches on our brand new home that we’ve been building for the past year. When I think of all of my favorite southern staple dishes, cheese grits is one of the first things that comes to my mind. I’ve eaten grits for as long as I can remember, and while you can find grits all over the country, there’s no questioning that the people of the south have an undeniable and unwavering love for the coarsely ground corn meal dish that surpasses all state boundaries.

You know what really gets me excited? Like – jump up and down, sing at the top of my lungs, and maybe throw in a cabbage patch dance kind of excited? Food. Always food. No doubt about it.

That should come as NO surprise to many of you who have been following this blog for a while. Food instantly takes me to my happy place. When it’s time to eat, I’ll be the first one to show up and show out to get some grub in my tummy. I never miss a meal, and I especially never miss breakfast. Celebrating St. Patrick’s Day at school as a kid was always so much fun. The teacher would usually share a little bit about the history of St. Patrick’s day, and it’d always be followed by doing some sort of fun DIY project or snack craft for us all to dig in to.
