I wish a wish that’s just for you, that you would read a book or two. That fun would jump right off each page, and that you’d laugh no matter your age! That you’d find joy with every rhyme, and that you’d want to read ALL of the time! Reading is fun, this much is true, and Dr. Seuss makes me laugh right down to my shoes. That’s why I thought it’d be so neat if only I could find some snacks to eat! A few that are clever, cute and yummy…and will make you smile when they fill your tummy!

Read Across America kicks off this year on March 2nd, which just so happens to be Dr. Seuss’s birthday. To celebrate such a fun occasion, I thought I’d put together a roundup of some of the cutest little snacks around that are inspired by that ol’ cat in the hat!

Double Chocolate Peanut Butter Cup Brownies

Yesterday I took some time to celebrate all of the good and fun things that are going on around me this month. I’ve had a full schedule this entire month, but I finally had a moment where I could just sit back and reflect on a few exciting things happening for my friends and family.

My cousin just celebrated her 14th birthday right after Valentine’s Day. (You’ve seen her make an appearance in the kitchen with me once before!) On top of her turning another year older, she had cheerleader tryouts yesterday to try to earn a repeat spot on the junior varsity team. I knew this was a really big deal to her, being there to cheer her on was a top priority.

Can we please move past all of this cold weather already and more right along to Spring? I’m ready to see some flowers bloom and to ditch my jacket and bring out the flip flops! Just last week I posted a roundup of a few of my favorite Farmhouse-style decor pieces to spruce up an office space (Farmhouse Finds for the Office). I don’t know about you, but it doesn’t take long for me to start getting the winter blues during this time of year. In my neck of the woods, we very seldom ever get any snow, but there are some days that it’s so frigid cold that your bones feel like they’ve frozen over. It’s days like that that tend to leave me feeling just all around yucky. My toddler goes stir crazy from being in the house all day. I start to get a little lethargic and things on my to-do list just don’t get done. I develop the pre-teen “I just don’t wanna” attitude and daydream about living in my pajamas and watching movies all day. I mean, it’s cuddle season, y’all! Why on earth would I want to clean the house and slave over the stove when I could be warm, sitting on my couch and snuggling with my baby? Am I right?!

Recently my husband and I were talking about meals that we used to eat frequently as a child that we still love to eat as adults. My mind immediately drifted back to my dad fixing us scrambled egg sandwiches and grilled cheese’s on a regular basis. I still make both pretty frequently (and luckily Kyle likes both of those!) I’m always on the prowl for a quick and easy dish that my family will love. My husband and I are crazy about pasta, and earlier this month I caught a really good deal on some smoked Polish sausage at my local Publix. Hippity Hoppity, Easter’s on its way! Here lately I’ve been seeing a lot of really clever and tasty ideas floating around Pinterest for some pretty spectacular Easter treats that are fun to make, and even sweeter to eat! Out of ALL of the holidays that have seasonal candy directly related to them, Easter is my very favorite. Why, you ask? One word: Cadbury Creme Eggs. Okay, maybe that’s 3 words… but you get the idea! As much as I like to cook new things and get a little fancy-pants in the kitchen, sometimes I just want to kick back and enjoy the simplicity of a good ol’ peanut butter and jelly sandwich. There’s really nothing in the world quite like eating a PB& J.
