It may technically still be spring, but I can taste the sweetness of summertime on my lips. The long days, the hot temps and the fresh fruits and veggies harvested straight from the garden bring a new life to me that I long for all winter long. I crave the tartness of a freshly squeezed lemon in my drink, and my tummy rejoices over the dripping of an ice cream cone running down my hand. These little moments are the ones that bring me so much happiness, and I long to harness that joy any way that I can so that I can savor it all summer long! Alabama weather can certainly throw you for a loop at times, but there’s no denying when summer finally makes its long awaited debut. That warm, sultry air that fills your lungs when you step outside in the morning brings every indication that the day is going to be a scorcher, and the first bead of sweat rolls down your forehead before you even make it to your car. Lemon Poppy Seed Bread

Some of my most cherished items are handwritten recipes that have been given to me over the years from family members and friends. I have a rather large collection of cookbooks, including a few church cookbooks from various congregations nearby. Earlier last week I stepped outside on my back porch to recharge and get a breath of fresh air. I inhaled that old familiar Alabama humidity that could make an Eskimo break a sweat, and I knew that spring was finally making it known that it was officially here to stay. You’d think it’d be the 1/2 inch layer of pollen caked on top of my car, but it’s really that deep, sultry humidity that’s the telltale sign for me.

Easy Easter Bird Nests

The pollen count here in my neck of the woods has been absolutely astronomical. Honestly, you could tell me the count reached 100 million and I’d totally believe you. It’s been pretty brutal, and it’s certainly shown my sinuses no mercy over the last 2 weeks. I checked myself into urgent care two weekends ago and was told I had a nasty sinus infection centered around the left side of my head. I received an antibiotic shot and a prescription and was sent on my way. Fast forward to now – I’ve got a NEW sinus infection on, you guessed it, the right side of my head. I can’t catch a break, y’all!

Just a few days ago, the temperatures here in Alabama reached a record high for the month of February. While my youngest was napping, my oldest slipped into her little swimsuit and I filled a large feed bucket with cool water for her to splash in. She ran and got her bathtub toys and splashed in the water for nearly an hour while I sat and watched her, amazed by her adorableness and the fact that my daughter was standing in front of me in a swimsuit in February. Alabama weather is so fickle sometimes, but we certainly weren’t complaining. Feeling the warmness of the sun on my legs made me think of all the beautiful plants and foliage that would soon be blooming, and I could feel the spring season unfolding right before our very eyes.

Fresh Strawberry Pie

This recipe for Fresh Strawberry Pie makes for a perfect summertime (or anytime) treat! It’s super easy to make, and adding a little whipped cream on top takes this pie over the top!

I would be remiss if I didn’t share a scrumptious pie recipe with you guys on Pi Day! If you’re scratching your head in confusion over the notion of Pi Day, let me fill you in a bit. Pi Day is the annual celebration of the mathematical constant Π that takes place on March 14th (3/14). The House of Representatives supported the designation of Pi Day back in 2009, and my gut tells me that it’s not just to celebrate a mathematical number. Clearly somebody brought those representatives a slice of pie when making the decision, because how could you turn down a holiday where you get to celebrate by eating a slice of pie? 😉

Growing up near the gulf, it’s not at all uncommon to see Mardi Gras celebrations pop up in cities near mine. All of the hype leading up to the carnival celebration has had me itching to dig a little bit deeper into the customs and cuisine of the holiday, and you know I love any reason at all to whip up a new recipe and do a little taste testing!  While people typically associate Mardi Gras with the crazy shenanigans that happen on Bourbon Street in New Orleans, Louisiana, it was actually first celebrated in the United States in Mobile, Alabama. It’s no secret we Alabamians know how to throw a party! 😉

It was early one weekday morning, and Taralynn emerged from her bedroom and sprinted down the hall into my office to find a spot in my lap to nestle into. She wiped the sleepy dust out of her eyes and gave a little grin as I whispered “Good Morning, Taralynn” in her ear. She looked up at me without missing a beat and whispered, “I’m not Taralynn. I’m a unicorn.” Without any hesitation at all, I stepped foot into her land of make believe where I got to witness her imagination come alive in the most magical ways – magic that only a true unicorn can possess. Fun fact about me: I spent my 14th birthday in Dublin, Ireland on a student ambassador trip with 40 other kids from Alabama. I had the opportunity to stay in the home of a family with children that were close to my own age for a few days and familiarize myself with bits and pieces of their culture that you can only experience first hand. While the terrain of Ireland wasn’t as green as I had dreamed it would be, it was stunningly beautiful nonetheless. I will say that many of the people were a bit more fiery in nature than what I was accustomed to, but they were welcoming and gave me memories I’ll never forget!St. Patrick's Day Sugar Cookies…
