It was early one weekday morning, and Taralynn emerged from her bedroom and sprinted down the hall into my office to find a spot in my lap to nestle into. She wiped the sleepy dust out of her eyes and gave a little grin as I whispered “Good Morning, Taralynn” in her ear. She looked up at me without missing a beat and whispered, “I’m not Taralynn. I’m a unicorn.” Without any hesitation at all, I stepped foot into her land of make believe where I got to witness her imagination come alive in the most magical ways – magic that only a true unicorn can possess. Oh, to be 3 again!

Just a few days prior to our morning of pretending to be magical unicorns parading through an enchanted forest, we stumbled across something truly extraordinary in the eyes of my daughter during our grocery shopping trip at our local Walmart- Unicorn Magic Snack Pack Pudding Cups.  She squealed with delight as I placed them in the buggy, and was entranced by the unicorn pictured on the front of the box. I could tell in that moment that we were going to have to do something extra fun with these magical pudding cups!

Snack Pack pudding cups have always been a pantry staple in our household. My daughter loves pulling one out to have as an afternoon snack, and I love that they contain no high-fructose corn syrup and have 0g trans fat per serving! My daughter loves to add sprinkles to her Snack Pack pudding cups, which sparked a little inspiration in my own mind for a super fun snack to pair with our new Unicorn Magic Snack Pack Pudding Cups – Enchanted Unicorn Doughnuts!

Whenever I get the urge to bake, I pull out my old trusty cake doughnut recipe to add a little sweetness into our day. While I love a good yeast doughnut, I don’t love the process of waiting for yeast to set and dough to rise. These cake-like doughnuts are decadent and so easy to personalize. You can add all sorts of fun things inside the batter if you so choose. For this recipe, we kept the batter simple so all of the magic could be seen from the outside!

No doughnut is complete without a sweet, sugary glaze. This simple caramel glaze is my go-to when making doughnuts. Once the glaze dries, it sets into a perfectly flaky sugar crust that always makes you go back for seconds – or thirds!

Enchanted Unicorn Doughnuts

Ingredients

Doughnuts

• ¾ cup brown sugar
• 3 tbs melted butter
• 1 egg
• ⅔ cup heavy whipping cream
• 1 tsp vanilla
• 1¼ cup all purpose flour
• 1 tsp baking powder

Caramel Glaze

• 1 cup brown sugar
• ½ cup heavy whipping cream
• 4 Tbs butter
• 1 cup powdered sugar
• ¼ tsp vanilla
• Unicorn Magic Snack Pack Pudding Cups for garnish
• Colorful Sprinkles for garnish

Instructions

• Preheat oven to 350
• Generously grease the inside rings of a doughnut baking pan with butter or shortening to prevent sticking
• In a large bowl, combine 3 Tbs melted butter with ¾ cup brown sugar until thoroughly mixed
• Stir in egg and vanilla
• Add heavy whipping cream, flour and baking powder and stir until well combined
• Transfer batter into piping bag and pipe one layer of batter into each doughnut hole in the baking pan
• Bake for 15 minutes, or until a toothpick inserted into the middle of a doughnut comes out clean
• Allow to set on a wire rack to cool completely before adding caramel glaze

Caramel Glaze

• In a sauce pan over medium/low heat, melt together butter and brown sugar and stir
• Once the butter is melted, add in cream and vanilla and bring to a boil - stirring constantly
• Allow to boil for about 3 minutes while stirring constantly and then remove from heat
• Add in powdered sugar and stir until well combined
• Dip the top of each doughnut into the glaze or drizzle glaze over each doughnut with a spoon
• Pour Unicorn Magic Snack Pack Pudding Cups into a piping bag and drizzle pudding over doughnuts. Add sprinkles and enjoy!

I love when products are designed to be extra fun for the kiddos!

Now each time we stop for a snack break, Taralynn reaches for her unicorn crown and asks for a Unicorn Magic Snack Pack. She gets a little messy each time she eats one, but isn’t that part of the fun? When you’re having this much fun with your food, how could I say no?

And speaking of fun, we found a few awesome free printable family fun games available on the Snack Pack website! Taralynn has really been into puzzles and mazes lately, so the unicorn maze was perfect for adding even more magic into her day!

I love watching my daughter’s imagination grow and flourish each day, and being able to incorporate fun snacks into the day is a really great way to make all 5 of her senses come alive during playtime. Giving her the creative freedom to decorate her own enchanted unicorn doughnuts really made her day, and we’re already talking about incorporating these doughnuts into her upcoming birthday party!

As I’m waiting for her to wake up this morning, I’m eager to see where her imagination will be taking us as she crawls into my lap. I’m really hoping for another day filled with unicorns, sprinkles and enchanted doughnuts, because those kinds of days are truly the most magical days of all!
