Before we get to the good stuff, I wanted to share a few personal resources with you when it comes to preserving wild game. My family hunts, cleans, processes and bags venison meat ourselves. While many people take their game to a processor, we cut the middle man and save a ton of money each year by doing this on our own. In this particular post, I share about the meat grinder system that we swear by, and in this post I share about how we preserve our wild game (fish, venison, etc.) so that it stays fresh all year long! I highly recommend both systems, and I am happy to answer any processing questions you may have!

Venison lasagna is one of my favorites. I like to just replace what would be ground beef with ground venison. To make it simple layer your favorite tomato sauce (2 jars), ground venison, cottage cheese, and mozzarella cheese. One box of lasagna pasta and two pounds of venison makes one huge cake pan lasagna, which works perfect for feeding my huge family with about 12-14 servings

My own concoction is cubing about 1 lb either tenerloin or backstrap and cooking it w 2tbs olive oil and while its browning sprinkle in cinnamon, ginger, and lots of garlic. Serve on top of delicious zoodles. Salt and pepper to taste. My kids like it like that. If you like with more of a punch add either red pepper flakes or some cayenne pepper. Absolutely love this in the summer.
