When we think about Valentine’s Day, most people think about heart shaped boxes of chocolate, flowers, oversized stuffed animals, and those weird candy hearts that are made out of sugary chalk. But when I think about Valentine’s Day, my mind goes in a different direction. First, I think about love, and then I think about my love for these fabulous strawberry brownies. Keep your chocolates and flowers! I’ll take a batch of these, please! 😉
Some would argue that these aren’t brownies, and they’d be absolutely right. Brownies are made with chocolate and are, well, brown. These are neither of those things, but they’re rich like a brownie! They’re much richer than cake in my opinion, and they’re also much more dense. Not to mention, I think “strawberry brownies” flows much better than ‘strawberry sort-of-not-really-cake squares”, don’t you agree? Nevertheless, they’re a sugary sweet concoction that will make you fall head over heels in love, y’all! And with just three ingredients, you’ll be tempted to make them all year long..not just on Valentine’s Day!

Here’s what you’ll need to make this sweet treat:
Ingredients:
- 1 Box Strawberry Cake Mix
- 2 Eggs
- 1/3 cup oil
Directions:
- Preheat oven to 350 F
- Spray 8×8 baking dish with non-stick cooking spray
- In a large mixing bowl, combine all ingredients until well blended
- Spread mixture evenly into the baking dish
- Bake for 30-35 minutes – or until set. (You may need to add a few extra minutes to the cook time. You can check to see if the brownies are done by inserting a toothpick into the center of the dish)
- Allow the brownies to sit for 10 minutes. The brownies will harden a tiny bit while cooling.
- If you’d like to add glaze to your brownies, you can using the following:
- 1 cup powdered sugar
- 2 tbsp water
- Blend well together and drizzle over strawberry brownies
- Enjoy!
I think these yummy treats would be PERFECT to give out as Valentine gifts! Just wrap them up in clear plastic cups, tie with a ribbon, and attach a cute little gift tag. Voila! These are so much cuter than those prepackaged card stock Valentine cards that you tape a pack of Smarties to. 😉

While I understand that Valentine’s Day is not a religious holiday, when I think of love, I always think of the love Jesus showed to others.
