This recipe for Strawberry Jalapeno Salsa is a light and refreshing dish that comes together in minutes!
Don’t you love it when a recipe comes together and it never once requires you to heat up your hot oven or stove? Now that we’re in the middle of June, that’s certainly something I can appreciate. During these dog days of summer my preference is to have light and refreshing options during the day for lunch, and firing up the grill outside for anything else that needs cooking. My kitchen is my work space, and I always prefer to keep it a sweat-free zone if I can!
Yesterday afternoon when my husband came home from work, I prepared a simple charcuterie board (more on that coming very soon) and we snacked on the variety of meats, cheeses and fruits all evening. It served as a light but filling supper, and there was no cooking, dirty dishes or sweat involved! To go along with our feast, I had an assortment of chips and this fresh strawberry jalapeno salsa out to enjoy. So often we think of strawberries as being very sweet, but the mix of red onion, cilantro and jalapeno in this salsa give it a surprisingly savory taste that I just can’t get enough of!
This salsa calls for just a little bit of dicing, and then tossing in a bowl and giving it a good stir. Bada bing, bada boom – you’re done! Now that’s my kind of recipe! I’d be perfectly content curling up with a bowl of this salsa in one hand and a bag of chips in the other. I could probably eat the whole bowl – no apologies! This dish would be a great choice to bring to a potluck or BBQ event this summer, and it would also be amazing with a little fresh pineapple or mango thrown into the mix, too!
