Does anyone else’s life seem to speed up during the weekend instead of slow down? Weekends are supposed to be a time to unwind from the busy work week, but my family is currently in a season of life where it seems like the only rest we get is when we close our eyes at night to get a little shuteye!
Because we’re still in the home building process, so much of my husband’s time is poured into working at the construction site. It seems like he works from sun up to sun down every chance he gets, and this past Saturday was no different. He’s a hard working man, that’s for sure!
And while he was going in one direction, my schedule was taking me in an entirely different direction. My mother and her husband recently purchased a new home about 45 minutes north from me, so I started to load my little one up in the car to head that way to eat lunch with them and to help them start to unpack their belongings and settle in.
But while I was getting ready, I remembered that my husband was working out in the hot sun building up an appetite, and he’d probably appreciate me preparing him a quick bite to eat before I left town. I peeked into the refrigerator to see if I had some quick fixings to throw together, but the only thing staring back at me when I opened up the door were two uncooked chicken breasts that really needed to be eaten. I quickly dismissed the idea of cooking chicken because I knew I wouldn’t have time to cook them before I left.
I was just about to send him a text letting him know he’d just have to ride into town to go pick up a bite to eat for lunch when I remembered that I have a magic machine that could cook that chicken up in a jiffy while I finished getting ready!
The Power Pressure Cooker XL cooks very similarly to a slow cooker, only it’s about 10 times faster and meat cooked in it comes out so much more juicy and moist. It traps super-heated steam inside inner pot while cooking to lock in flavors and keep the meat super tender and delicious. It even has pre-programmed one touch settings for meat, fish, vegetables, beans, rice, soup or stews. Just tap the one you need and it does all of the work for you!
I decided to fix a batch of easy chicken salad for my husband to eat during his lunch break – and I had it ready in just 20 minutes flat from start to finish!
First, I placed the two large chicken breasts into the inner pot of the Power Pressure Cooker XL. I added a smidge of broth and a few other seasonings and closed the lid tight and locked it into place. I tapped the chicken setting and the time was already adjusted to a 15 minute cook time. You can always adjust the time more if needed, buy 15 minutes was all my chicken needed to come out perfectly cooked and juicy!
While the chicken was cooking in the pressure cooker, I boiled 3 eggs, peeled and chopped them and set out the remaining ingredients to prepare the chicken salad. Once the chicken was finished cooking, I placed it into a food processor while it was still hot and added the remaining ingredients and pulsed it for just a few seconds until it reached the consistency that I liked.

Easy Southern Chicken Salad
Ingredients
- 2 large chicken breasts
- 1 tsp olive oil
- 1/4 cup chicken broth
- 1 tsp salt & pepper
- 2 cloves garlic minced
- 2 Tbs spicy brown mustard
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 3 Tbs sweet pickle relish
- 3 hard boiled eggs - peeled and chopped
- salt and pepper to taste
Instructions
- Place first 5 ingredients into the inner pot into the Power Pressure Cooker
- Secure and lock lid and press the Chicnen/Meat button
- Adjust the cook time selector to 15 minutes to begin cooking process
- Switch the pressure release valve to open
- Once the timer goes off and the steam is completely released, remove the lid and transfer chicken to a plate to cut into medium sized pieces
- Transfer chicken while it's still hot to a food processor and add remaining ingredients
- Pulse for a few seconds, or until the chicken salad is at the right texture for your taste
- Chill chicken salad before serving
- Serve with bread, crackers, fresh apple slices etc
- Feeds roughly 4-5

I placed the chicken salad into a bowl and set it in the refrigerator to chill until it was time for my husband to come in for his lunch break. I was so happy to have the Power Pressure Cooker XL on hand to help me prepare a quick and easy lunch on the fly for my husband. The recipe made plenty for him to enjoy, plus there was a good bit left over for us to share for supper later that night!
I LOVE to add fresh grapes, pecans and sometimes apple slices into my chicken salad, but my husband isn’t a fan of it that way. I keep the fruit on the side and serve with club crackers and sliced bread for making sandwiches. Honestly, though, I could totally just eat this chicken salad by the spoonful! 😉
My next adventure is to learn to can fresh produce with my Power Pressure Cooker XL! It’s proven to be such a versatile kitchen appliance, and I can’t wait to try out all of the easy recipes in the power cooking and home canning recipe cook books that came with it!
