Gluten Free Skinny Berry Cheesecake Trifles

April 15, 2019 by Laura Tucker 1 Comment

“This post is part of a social shopper marketing insight campaign with Pollinate Media Group® and Betty Lou’s, Inc., but all my opinions are my own. #pmedia #BettyLousAtWalmart  http://my-disclosur.es/OBsstV”

Earlier last week I stepped outside on my back porch to recharge and get a breath of fresh air. I inhaled that old familiar Alabama humidity that could make an Eskimo break a sweat, and I knew that spring was finally making it known that it was officially here to stay. You’d think it’d be the 1/2 inch layer of pollen caked on top of my car, but it’s really that deep, sultry humidity that’s the telltale sign for me.

Operation Bug-Be-Gone: Our #1 Spring Cleaning Hack

April 12, 2019 by Laura Tucker Leave a Comment

This post has been sponsored by Zevo. All opinions expressed within this post are 100% my own.

With spring in full swing, my inner “spring cleaning” gene that has been lying dormant for months has finally come back to life, and I’ve been itching to get this house squeaky clean and to get a fresh start. With two very small children in the house, my floor and furniture are currently taking bets with each other to see which one can collect the most graham cracker crumbs and juice splatters. So far, they’re both pretty neck and neck! I’ve always said that cleaning your house with a toddler in it is like brushing your teeth while you’re eating chocolate cake – it’s nearly impossible! But alas, the house won’t clean itself!

Sweet Cheddar Cheese Muffins – A Jim ‘N Nick’s Copycat Recipe

April 2, 2019 by Laura Tucker 3 Comments

I’ll never forget the first time I had a Jim ‘N Nicks cheddar biscuit. It’s not that often that I can so easily recall where I was and what I was doing when I try a new food, so the fact that it made this sort of lasting impression on me is a true testament to how good their cheddar biscuits really are.

Easy Easter Bird Nests

March 27, 2019 by Laura Tucker Leave a Comment

The pollen count here in my neck of the woods has been absolutely astronomical. Honestly, you could tell me the count reached 100 million and I’d totally believe you. It’s been pretty brutal, and it’s certainly shown my sinuses no mercy over the last 2 weeks. I checked myself into urgent care two weekends ago and was told I had a nasty sinus infection centered around the left side of my head. I received an antibiotic shot and a prescription and was sent on my way. Fast forward to now – I’ve got a NEW sinus infection on, you guessed it, the right side of my head. I can’t catch a break, y’all!

Strawberry French Toast Bake

March 22, 2019 by Laura Tucker 22 Comments

Strawberry French Toast Bake is all the rage in our household right now. Grab the recipe here and prepare to fall in love!

Few things make me happier than sitting down to a warm breakfast. Admittedly, it’s not something I elect to do every morning, but when Saturday and Sunday roll around, I like to break out the frying pans and casserole dishes and crank up the music while I summon up a little culinary magic in the kitchen. Making a French toast dish with fresh strawberries had been on my mind for days, and I was ready to get the breakfast party started!

PEEPS® Marshmallow Mousse

Just a few days ago, the temperatures here in Alabama reached a record high for the month of February. While my youngest was napping, my oldest slipped into her little swimsuit and I filled a large feed bucket with cool water for her to splash in. She ran and got her bathtub toys and splashed in the water for nearly an hour while I sat and watched her, amazed by her adorableness and the fact that my daughter was standing in front of me in a swimsuit in February. Alabama weather is so fickle sometimes, but we certainly weren’t complaining. Feeling the warmness of the sun on my legs made me think of all the beautiful plants and foliage that would soon be blooming, and I could feel the spring season unfolding right before our very eyes.

Fresh Strawberry Pie

March 14, 2019 by Laura Tucker Leave a Comment

This recipe for Fresh Strawberry Pie makes for a perfect summertime (or anytime) treat! It’s super easy to make, and adding a little whipped cream on top takes this pie over the top!

Happy Pi Day!

I would be remiss if I didn’t share a scrumptious pie recipe with you guys on Pi Day! If you’re scratching your head in confusion over the notion of Pi Day, let me fill you in a bit. Pi Day is the annual celebration of the mathematical constant Π that takes place on March 14th (3/14). The House of Representatives supported the designation of Pi Day back in 2009, and my gut tells me that it’s not just to celebrate a mathematical number. Clearly somebody brought those representatives a slice of pie when making the decision, because how could you turn down a holiday where you get to celebrate by eating a slice of pie? 😉

Irish Twice Baked Potato Bites

March 1, 2019 by Laura Tucker Leave a Comment

With St. Patrick’s Day quickly approaching, I recently decided that this season would be a great time to dig up a few of my roots and learn a thing or two about Irish culture and cuisine. Though I’ve never personally had a genetics test done, my older sister went through the process a few years back and discovered that nearly 50% of our roots point straight to the beautiful country of Ireland. This was really no huge shock to us, as both my sister and I are rather fair complected. The fact that my Grandmother’s maiden name was McGillick was also a pretty good indicator that we might have a tad of Irish in us, too. While I know very little about my ancestors from this particular part of the world, I have picked up a few cultural tidbits over the years that make me look forward to wearing a little green to bring the luck of the Irish my way each St. Patrick’s Day!Irish Twice Baked Potato Bites…

How To Pack a Tornado Preparedness Kit – From a Survivor’s Perspective

March 1, 2019 by Laura Tucker 4 Comments

This post is written in memory of those who lost their lives in the Enterprise tornado on March 1st, 2007, and in honor of the survivors whose wounds are still healing.

I’m always amazed at how vastly different climate and weather conditions can be in different sections of our country. Hurricanes, tornadoes, blizzards, droughts and things of the like affect so many of us throughout the year, but not everyone experiences the same conditions. Hurricanes rock the gulf coast every summer, but people in the plains are obviously unaffected. The northeast may get pounded by snow, but Alabamians could barely tell you what a snowflake looks like. Weather is often a tricky subject for me. While I want to delight in its beauty and mystery, I had an encounter with inclement weather in 2007 at the age of 16 years old that shook me to my core, and just like an earthquake, I’m dealing with the ripple effects years later that will likely affect me for many more years to come.

One Important Business Tool To Never Forget + Why I Love Basic Invite Business Cards

February 25, 2019 by Laura Tucker Leave a Comment

I received compensation in exchange for my honest review. All opinions expressed are completely my own.

From 2008-2012, I spent my days as an undergraduate student studying business administration with a focus in marketing. Just like with any major, there are a slew of classes you have to take that don’t necessarily pertain specifically to your major, but are put in place to help you become more “well-rounded” in your field of study. The summer of my junior year, I registered for a class called Personal Selling. I admit to rolling my eyes a bit when I discovered it was a mandatory class, as I knew I didn’t want to be caught up in sales for a career, but my favorite marketing professor was teaching it, so I thought that it might not be too bad.
