Spicy Marinated Tomatoes are a perfect summer side dish to share with friends and family!
This past weekend I woke up before the rest of the household and made my way to our local (it’s 25 minutes away, but we’ll call it local) farmers market to stock up on some fresh produce for the week. Back when we had just one little Tucker tot running around, we had a garden in our back yard that was small and easy to manage. We grew tomatoes, squash, fresh herbs and things of the like. Now that we have two children, I’m more than happy to let someone else do the work and I’ll support their business by buying from them. I have a hard enough time managing two girls, never mind adding a garden into the mix!
Last summer I was pregnant with our youngest daughter, and my biggest pregnancy craving was fresh tomatoes. I survived many a day on a tomato sandwich with a little mayo, salt and pepper. Honestly, it just can’t get much better than that on a hot summer day! I had my eyes on the prize when I entered the farmer’s market on Saturday, and I headed straight for the booth that had an assortment of big beautiful tomatoes all in a row. Having this recipe dancing around in the back of my mind, I knew I wanted all different shapes and sizes of tomatoes, and the market definitely did not disappoint!
My grandmother almost always has a fresh sliced tomato on the table for anyone that wants one during our Sunday dinner after church. It’s something I always look forward to, and it’s a perfect little extra to have on your plate – especially when your plate is filled with lots of home grown goodness! This dish takes a sliced up tomato and gives it a little something extra. It’s simple, light and refreshing and makes for a perfect side dish to serve at any meal during the summer months!

Spicy Marinated Tomatoes
Ingredients
- 2 lbs ripe tomatoes various sizes and varieties if desired cut into chunks
- 1.3 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 2 Tbs diced pickled jalapenos more or less to taste
- 1/2 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 garlic clove minced
- 1 small handful fresh basil chopped
- 2 Tbs diced pickled jalapenos more or less to taste
Instructions
- Combine all ingredients in a bowl. cover and refrigerate for 2 hours
- Before serving, give it a quick stir and enjoy!
