Let’s talk about goals, shall we? Goals and resolutions are two popular buzz words that always float around during this time of year, and people have been busy planning out all of the things they hope to accomplish or change as they start another trip around the sun. I, too, make a list of goals that I want to accomplish every year, and I love being surrounded by true goal-diggers who help keep me motivated long past the end of January. I’m not typically one who can persevere through obstacles on her own without a little support from friends and family, so having a cheer squad to help me achieve my goals is pivotal for me.
While most of the time my goals are work related, I do make personal and self-improvement goals from time to time. Unfortunately, many people that set self-improvement goals (i.e. lose weight, eat more wholesome foods, exercise more, etc.) often lose momentum after a short period of time, simply because they feel that the work they’re having to put in to achieve their goal is hard. Throw those hands up in the air if you’ve been down that road before. I know I have!
This year, I’m choosing to make a personal goal to eat more good food that is good for me, but more than that, I’m aiming to make this lifestyle change as simple and stress-free as possible by making wholesome-focused food substitutions and utilizing simple cooking methods that don’t require a lot of prep or too many steps. Keeping it simple in the kitchen is one of the best things we can do to keep the food we eat delicious and nutritious, and a better for you-conscious 2018 is exactly what I’m aiming for!
I’ve been starting out a little slow, but I like to operate that way sometimes. I’m easily overwhelmed, so slow and steady with certain things is best for me! I’ve been teaching myself how to take my all-time favorite meals and lighten them up a bit. This week, I’ve transformed good ol’ fashioned chicken salad (seriously my FAVE) and gave it a whole new look, and it’s been a change that I think will be here to stay!
I’ve never been one to eat a whole lot of avocados. I really have no idea why, because I really like them! I’m loving that they’re loaded with lots of good-for-you nutrients and wholesome fats, and they’re easy to incorporate into recipes to give them an extra wow-factor! They’re a shining star in my Creamy Avocado Chicken Salad Wraps, and they’re easy peasy to make!
Traditional chicken salad uses mayonnaise as a binder, but I like to use a low-fat plain Greek yogurt to make it more waistline friendly. To make this Creamy Avocado Chicken Salad, simply combine 2 cups of chopped or shredded chicken, Greek yogurt, an avocado, fresh chopped cilantro, lime juice, chopped boiled eggs, a few bacon pieces, a smidge of cumin and salt and pepper to taste. Creamy Avocado Chicken Salad Wraps
Ingredients
- 1 Package Mission® Carb Balance Soft Flour Tortillas
- 3 medium sized chicken breasts cooked and shredded (Should be about 2 cups worth)
- 1 large avocado diced
- 2 boiled eggs chopped
- 1/4 cup fresh cilantro chopped
- 3/4 cup low fat Greek yogurt add more if needed
- 1/2 tsp cumin
- 2 Tbs real bacon bits
- Juice from 1 whole lime
- Salt and pepper to taste
Instructions
- Cook 3 chicken breasts in oven preheated at 350 F for 45 minutes, or until completely cooked all the way through. Shred chicken using a fork, or use a food processor if you like a finer shred.
- Boil eggs until cooked. Peel and chop
- Cut open avocado and dice
- In a large bowl. combine chicken, Greek yogurt, chopped eggs, fresh cilantro, lime juice, avocado chunks, cumin and bacon bits and stir until well combined (season with salt and pepper if needed)
- Place a few heaping spoon fulls of chicken salad onto Mission® Carb Balance Soft Flour Tortillas and wrap
- Serve with fresh cilantro and enjoy!
