Bacon & Blue Cheese Salad Skewers - The Perfect Side Dish for Pizza Night!

Ingredients

  • 6-8 pieces of bacon cooked but not crispy
  • Iceberg lettuce - cut into small wedges
  • Cherry Tomatoes
  • Blue Cheese Chunks
  • Bamboo or metal skewers
  • Blue Cheese Dressing See note for recipe below

Instructions

  • Chop salad into small wedges and slide pieces onto skewers
  • Do the same with bacon and cherry tomatoes
  • Add blue cheese chunks as desired or top with homemade blue cheese dressing
  • Feel free to dress this recipe up with your favorite salad toppings!
  • Store leftovers in a sealed container in refrigerator for no more than 2-3 days. Discard when salad starts to wilt or turn brown.

Notes

Blue Cheese Dressing Recipe:
1/3 cup buttermilk
1 4oz container of crumbled blue cheese
1/4 cup mayonnaise
1/2 tsp sugar
1/4 tsp garlic powder
1/3 cup sour cream
4 tsp white wine vinegar-*NOT white distilled
dash of salt and pepper
Directions:
Combine buttermilk and blue cheese crumbles. Mash well with a fork to break up cheese crumbles. Add remaining ingredients and stir. Pour contents into a sealed jar or container and let sit for roughly 4 hours to ensure all of the flavors meld together. Serve with salad, fresh veggies, pizza etc.
