Mocha Fudge Brownies with Creamy Coffee Glaze

Ingredients

  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs - room temperature
  • 1/2 cup cocoa powder
  • 1/2 tsp vanilla
  • 1/4 cup International Delight Iced Coffee - Mocha
  • 1 cup all purpose flour
  • 3/4 cup butter
  • 1 tsp salt
  • Glaze:
  • 1/4 cup butter
  • 1 cup confectioners sugar
  • 1/2 tsp cocoa powder
  • 1 Tbs International Delight Iced Coffee - Mocha

Instructions

  • Preheat oven to 350 F
  • Thoroughly spray an 8x8 baking pan with nonstick cooking spray
  • In a microwave safe bowl, melt butter - be careful not to scorch
  • Add in sugars and melt once again in the microwave for about 20 seconds
  • Stir in the International Delight iced coffee and allow to cool
  • Gently beat in eggs, cocoa powder and vanilla until well combined
  • Stir in flour and salt and stir well
  • Pour into baking dish and bake for 40-45 minutes, or until done in the center. (These brownies are supposed to be fudgey, so don't worry if there's still a very slight amount of batter that sticks to your knife or toothpick when you insert into the middle. It'll finish cooking as its cooling.)
  • Allow brownies to cool completely before applying glaze. *This is important*
  • To prepare the glaze, combine all ingredients and beat with a hand mixer until light and fluffy
  • Pour glaze over brownies and allow it to harden slightly before cutting
  • Top with semisweet morsels, chocolate shaving, caramel drizzle or serve without!
