Sweet Cheddar Cheese Muffins - A Jim 'N Nick's Copycat Recipe

- 1 1/2 cup all purpose flour
- 2/3 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk
- 1 egg
- 1/4 tsp vanilla-butter nut extract
- 4 Tbs butter melted
- 1 1/4 cup shredded cheddar cheese
In a large bowl. combine dry ingredients except cheese
In a separate large bowl, combine wet ingredients and whisk until smooth
Pour wet ingredients into dry ingredients and stir by hand until well incorporated
Add in cheese
Refrigerate dough for 1 hour before baking
Preheat oven to 400 F
Generously spray regular sized muffin tins with a non-stick cooking spray
Fill each muffin tin all the way to the top and bake for 18-20 minutes
Allow to cool slightly, serve with butter and enjoy!
