Cinnamon Raisin Buttermilk Muffins

Ingredients

Muffins

  • 2 cups all purpose flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/3 cup vegetable oil
  • 2 eggs large
  • 1 cup white granulated sugar
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 1/2 cup raisins

Cinnamon Topping

  • 1/3 cup white granulated sugar
  • 3 tsp cinnamon
  • 3 Tbs butter room temperature

Instructions

  • Preheat oven to 425 F
  • Combine flour, baking powder, cinnamon and salt in a bowl with a whisk until all clumps are broken up.
  • In a separate bowl, combine eggs, oil, sugar, buttermilk and vanilla and mix well.
  • Pour the wet ingredients into the dry ingredients and mix until all ingredients are incorporated well - be careful not to over mix
  • Fold in raisins
  • Spray muffin tins with non-stick cooking spray
  • To make the cinnamon topping, combine cinnamon, sugar and butter with a fork until it makes a crumble
  • Fill muffin tins half way full, then sprinkle about half of the crumble mixture over the muffins
  • Top muffins with remaining batter, followed by remaining cinnamon topping
  • Bake at 425 for 5 minutes, then bump temperature down to 350 F and bake for an additional 11-2 minutes, or until muffins spring back when center is pressed
  • Enjoy!
