Using a stand or hand mixer, beat brown sugar, egg, molasses and butter until smooth
Add in flour, cinnamon, ginger, baking soda and salt and beat on low speed until combined
Cover dough and chill for 1 hour
Preheat oven to 350 F
Spray a baking sheet with nonstick cooking spray and lightly dust counter top with flour
Roll dough out onto counter and roll with rolling pin until dough is roughly 1/4 inches thick
Use a star shaped cookie cutter and cut out cookies. Gently peel away remaining dough and transfer cookies to baking sheet
Bake for 12 minutes and remove from oven, allow to cool briefly on pan
Transfer to wire rack to finish cooling and repeat process until there is no remaining dough
Once all cookies have cooled, break off about 4 squares of white almond bark and melt in microwave in 30 second intervals, stirring in between until thoroughly melted
Transfer melted chocolate into ziploc bag and snip the very tip off of the corner of bag
Drizzle desired amount of chocolate onto cookies and allow to dry
