Pesto Chicken Sandwich with Creamy Goat Cheese and Sauteed Peppers - Recipe

Ingredients

  • 1 loaf fresh french bread I used Pepperidge Farm
  • 1 small package goat cheese usually found in the specialty cheese section
  • 1 package of thick cut chicken I used Oscar Mayer Carving Board brand
  • 1 red pepper seeded and sliced
  • 1 yellow pepper seeded and sliced
  • 2 tbs pesto
  • 1 tbs butter

Instructions

  • In a skillet, melt butter and lightly saute peppers. You want to make sure they still have a little crunch left to them when they are done.
  • Cut french bread in half - or to the size you would like your sandwich to be.
  • Spread goat cheese liberally onto bread.
  • Place as much chicken as you'd like onto bread - topping with pesto and peppers.
  • Toast sandwich open face in an oven heated to 350 F for 5 minutes.
