Preheat oven to 350 F and spray a mini muffin tin with non-stick cooking spray
Wash spinach and kale leaves and finely chop. (I used herb shears to make this step super fast!)
In a skillet over medium heat, combine spinach and kale plus 1TBS butter or coconut oil. If you're making this for yourself and not for a toddler (like me), go ahead and add 1/2 tsp of minced garlic to give it a little extra flavor (optional).
Cook until leaves are tender
In a large bowl, combine remaining ingredients and stir well
Pour contents into mini muffin tins about half way full
Bake for 10-12 minutes or until completely done in the center

Notes
To pack in some extra protein and nutrients, I added a packet of Similac Go & Grow Mix In's so I knew she'd really be getting a balanced snack. You can find these at Walmart!
