Brown Sugar Pecan and Cinnamon Apple Stuffed Sweet Potatoes

Ingredients

  • 4 medium sized sweet potatoes
  • 1/4 cup butter
  • 1 large apple peeled and chopped
  • 1/4 cup chopped pecans
  • 1/4 cup raisins
  • 1 handful fresh or frozen cranberries
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon

Instructions

  • Wash sweet potatoes thoroughly and pat dry
  • Poke a generous amount of holes in each sweet potato using a fork
  • Line a baking sheet with foil and bake sweet potatoes for 1 hr 15 minutes (or until completely done throughout) at 425 F
  • Peel and chop apple into small pieces
  • Place apples, cranberries, raisins and butter in a skillet and allow to cook down until apples have just a little bit of crunch left to them (on medium heat)
  • Toss in pecans and cook for an additional 1-2 minutes on low heat
  • Once sweet potatoes are done, scoop insides into a large bowl and mash
  • Add apple mixture into the potato mixture and stir well
  • Add filling back into potatoes and bake on 350 F for another 10-15 minutes
  • Top with additional pecans, cinnamon and raisins if desired
