Cajun Dirty Rice Egg Rolls with Creole Dipping Sauce

Ingredients

Dirty Rice Egg Rolls

  • 3 slices bacon cooked and chopped
  • 1 cup chopped bell pepper and onion blend
  • 1/2 cup chopped sweet onion
  • 1 large celery stalk chopped into small pieces
  • 2 garlic cloves minced
  • 1 jalapeno pepper seeded and finely chopped
  • 1 lb Odom's Tennessee Pride Mild Country Sausage
  • 4 cups long grain white rice cooked and cooled
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tsp creole seasoning
  • ¼ cup chopped green onions
  • ¼ cup fresh parsley finely chopped
  • 2 Packages Egg roll wrappers

Creole Dipping Sauce

  • 1 ¼ c mayonnaise
  • ¼ c creole mustard
  • 1 Tbsp paprika
  • 1 ½ tsp creole seasoning
  • 2 Tsp Horseradish sauce
  • 1 tsp dill pickle juice
  • 1 tsp hot sauce
  • 1 garlic clove minced

Instructions

  • In a large pot, cook rice according to package instructions. Allow to cool.
  • In a large skillet, cook bacon until done, but not overly crisp. Remove bacon from skillet and reserve drippings. Crumble bacon once cooled.
  • Add in chopped bell pepper, onion and celery and saute until tender.
  • Add garlic and jalapeno and cook for an additional minute.
  • Add in Odom's Tennessee Pride Mild Country Sausage and cook until no pink remains.
  • Stir in the cooked rice, salt, pepper and creole seasoning until well combined.
  • Add in reserved crumbled bacon, parsley and green onion.
  • Add a spoonful of prepared dirty rice onto each egg roll wrapper and roll according to package instructions.
  • Place 3-4 in deep fryer preheated to 350 and fry for 4 minutes.
  • Remove from grease and transfer to wire cooling rack before serving
  • Serve with creole dipping sauce and enjoy!
