Peeps Marshmallow Mousse

Ingredients

  • 2 packages Peeps per color layer. If adding multiple layers, use 2 packages per color
  • 3/4 cup International Delight® PEEPS® Sweet Marshmallow Coffee Creamer
  • 1/2 cup full fat Greek yogurt

Instructions

  • Remove PEEPS® from package and remove eyes before placing in medium sized pot or deep skillet
  • Pour 2 Tbs of International Delight® PEEPS® Sweet Marshmallow Coffee Creamer over PEEPS® and heat on lowest setting on stove
  • Stir constantly, making sure the marshmallows do not scorch
  • Once PEEPS® are fully melted, remove from stove and allow to cool for 5 minutes, but no longer as marshmallows quickly begin to harden
  • Using a whisk, stir in remaining International Delight® PEEPS® Sweet Marshmallow Coffee Creamer and yogurt and whisk until fully blended
  • Using a funnel, pour into small glass jars and refrigerate for about 20 minutes, or until set
  • Repeat this process as many times as you desire for each color
  • Serve with whipped topping, fresh fruit, or however you like!
