In a large mixing bowl, combine softened cream cheese, yogurt, stevia, honey and vanilla until completely smooth - add more sweetness if desired
Using a butter knife, chop Betty Lou's Fruit Bars into small bite-sized pieces and add a layer to the bottom of a small glass jar to make the "crust"
Pour desired amount of batter into jars and sit in refrigerator for about an hour to firm up just a bit
In a medium sized pan, stir together blueberries, stevia and lemon juice and zest and cook on low for about 8 minutes
Remove from heat and allow to cool
Top cheesecake filling with blueberry mixture and add more Betty Lou's Fruit Bar pieces on top if desired
Garnish with a touch of whipped cream and a sprig of mint and serve!
