Gluten Free Skinny Berry Cheesecake Trifles

Ingredients

  • 1 box Betty Lou's Fruit Bars
  • 2 8 oz packages of fat free cream cheese softened
  • 1 cup plain nonfat yogurt
  • 1/2 cup stevia
  • 1/4 cup honey use local honey if you can!
  • 1 Tbs vanilla extract

Topping

  • 1 10 oz package fresh blueberries or whatever berry you like
  • 1/2 lemon zested and juiced
  • 1/3 cup stevia

Instructions

  • In a large mixing bowl, combine softened cream cheese, yogurt, stevia, honey and vanilla until completely smooth - add more sweetness if desired
  • Using a butter knife, chop Betty Lou's Fruit Bars into small bite-sized pieces and add a layer to the bottom of a small glass jar to make the "crust"
  • Pour desired amount of batter into jars and sit in refrigerator for about an hour to firm up just a bit
  • In a medium sized pan, stir together blueberries, stevia and lemon juice and zest and cook on low for about 8 minutes
  • Remove from heat and allow to cool
  • Top cheesecake filling with blueberry mixture and add more Betty Lou's Fruit Bar pieces on top if desired
  • Garnish with a touch of whipped cream and a sprig of mint and serve!
