Mini Ham Jam Sandwiches - A Scrumptious Lunchbox Treat!

Ingredients

Sliders

  • 1 package Dinner Rolls King's Hawaiian Original
  • 1 package shaved deli ham
  • 1 package pre-sliced baby swiss cheese
  • Strawberry Chia Seed Jam see below - or your favorite jam
  • Sweet Mustard Glaze see ingredients below

Strawberry Chia Seed Jam

  • 1 lb strawberries stems removed
  • 3-4 Tbs honey 3 is sweet enough for me, but add more if you like!
  • 2 Tbs chia seeds

Sweet Mustard Glaze

  • 1 stick butter
  • 2 Tbs yellow mustard
  • 1/3 cup brown sugar
  • 3 Tbs Worcestershire sauce

Instructions

Strawberry Chia Seed Jam

  • Heat strawberries in a medium saucepan over medium heat. Add in honey and stir
  • Once the strawberries begin to fall apart, use a potato masher to press the jam to your desired consistency
  • Allow mixture to come to a slow boil, then add chia seeds
  • Continue cooking over low heat for about 10 minutes, stirring constantly
  • Remove from heat and pour into a small mason jar
  • Jam will last in refrigerator for about 1 week

Sandwiches

  • Preheat oven to 350 F
  • Using a large bread knife, slice the package of King's Hawaiian Original Rolls in half hamburger style (to save time, don't break rolls apart before slicing)
  • Layer bottom half of rolls into a greased baking dish
  • Layer sliced deli ham and baby swiss cheese on top of bread, followed by a layer of jam (I used about 3-4 heaping spoonfuls to cover all of the sandwiches)

Mustard Glaze

  • In a small pot, combine butter, brown sugar, mustard and Worcestershire sauce and bring to a boil. Once sauce begins to thicken slightly, the sauce is ready
  • Place tops back onto rolls and pour sweet mustard glaze on top
  • Bake for 15-20 minutes and serve immediately
  • Enjoy!
