Eggnog Sugar Cookies with Creamy Spiced Glaze

Serves: 20 cookies
  • 1 stick salted butter - room temp
  • 1 cup white granulated sugar
  • 1½ tsp rum extract
  • 1½ tsp vanilla extract
  • 1 egg
  • ½ cup eggnog
  • 2½ cups all purpose flour
  • ½ tsp baking soda
  • 1 tsp cornstarch
  • 4 Tbs Sugar + ½ tsp ground nutmeg to roll cookies in
  • For Glaze:
  • 1 cup powdered sugar
  • 1 Tbs eggnog
  • 1 tsp vanilla extract
  • 1-2 dashes ground nutmeg
  1. Using a mixer, blend together the butter and sugar until creamy
  2. Add in vanilla and rum extracts and egg and combine
  3. In a separate bowl, combine flour, corn starch and baking soda
  4. Slowly add in the dry ingredients into the mixer, alternating between adding flour mixture and eggnog
  5. Batter will become very thick
  6. Once batter is well combined, refrigerate for an hour or longer
  7. Preheat oven to 350 F
  8. Remove batter from refrigerator and grease a cookie sheet
  9. In a small bowl. combine extra sugar and nutmeg and set aside
  10. Roll dough into 1- 1½ inch balls using your hands and gently flatten a little with your palms Roll each ball around in the sugar mixture to coat
  11. Place the dough evenly spaced apart from each other on the cookie sheet and bake for 10-12 minutes
  12. Remove cookies from oven and allow to finish cooling on a wire rack
  13. While cookies are cooling, wisk together powdered sugar, eggnog, vanilla and nutmeg for glaze and drizzle on top of each *completely cooled* cookie
  14. Enjoy!
