Chocolate Chip Spinach Muffins

Serves: 1 dozen
  • 1½ cup all purpose flour
  • ⅓ cup cocoa powder
  • ½ cup granulated sugar (can sub in stevia or alternative sweetener if desired)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 egg
  • ⅓ cup melted coconut oil
  • ½ cup milk
  • 2 cups fresh spinach, chopped
  • 1 mashed banana
  • 2 tsp vanilla extract
  • ½ cup chocolate chips
  1. In a large bowl, combine all dry ingredients (excluding spinach)
  2. In a separate bowl, melt coconut oil and add in remaining wet ingredients, including banana and spinach - mix well
  3. Pour wet ingredients into dry ingredients and stir together well until all flour is completely dissolved
  4. Preheat oven to 350
  5. Place muffin cups in a muffin pan and spray lightly with nonstick cooking spray
  6. Fill each muffin cup about ¾ of the way full
  7. Bake for 20-22 minutes, or until toothpick comes out clean when inserted in the center
