Cranberry Pumpkin Muffins

  • 1 cup canned pumpkin puree
  • 1½ cup sugar
  • ½ cup brown sugar
  • 2¼ cups all purpose flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp all spice
  • ½ tsp cinnamon
  • 2 large eggs
  • ½ cup canola oil
  • 1 cup cranberries - left whole or chopped
  1. Preheat oven to 400 F
  2. Spray muffin tins with nonstick cooking spray or line with greased muffin baking cups
  3. In a large mixing bowl, combine flour, baking soda, all spice, cinnamon and salt
  4. In another large bowl, combine eggs and sugar and beat well
  5. Add pumpkin and oil into egg mixture and stir well
  6. Gradually stir in the dry ingredients until batter thickens and is well combined
  7. Fold in cranberries
  8. Pour batter into muffin tins and bake for 20-22 minutes, or until toothpick inserted in the middle comes out clean.
  9. Serve warm with butter and enjoy!
  10. Makes roughly 16-20 muffins
