Apple Cider Cinnamon Sugar Doughnuts

Serves: 1½ dozen
  • 2 cups apple cider
  • 1 large apple, peeled and grated
  • ½ cup unsweetened applesauce
  • 1½ Tbs apple cider vinegar
  • ½ tsp vanilla extract
  • 1 stick (1/2 cup) salted butter
  • ½ cup granulated sugar
  • 1 large egg
  • 3¼ cup all purpose flour
  • 1 Tbs baking powder
  • ¼ tsp ground cinnamon
  • For sugar coating:
  • ¼ cup butter, melted
  • 1 cup granulated sugar
  • ½ tsp ground cinnamon
  • ½ tsp pumpkin pie spice
  1. Combine apple cider and grated apple in a small saucepan over medium heat and cook, stirring occasionally, until mixture is reduced to about ½ cup (roughly 25 minutes)
  2. Allow mixture to cool completely
  3. Stir applesauce, vanilla and apple cider vinegar into mixture, set aside
  4. Beat butter and sugar using a stand mixer until light and fluffy
  5. Add egg and beat until combined
  6. In a large bowl, whisk together flour, baking powder and cinnamon
  7. Add four mixture and apple mixture to butter mixture alternatively, starting and ending with flour mixture
  8. Beat on low just until blended
  9. Transfer contents to a piping bag or gallon ziploc bag and snip the end
  10. Pipe batter into greased doughnut pan
  11. Bake at 350 F for 18-20 minutes, or until golden brown and springy to the touch
  12. Combine 1 cup sugar, ½ tsp cinnamon and ½ tsp pumpkin spice in a bowl
  13. Melt ¼ cup butter in a small bowl
  14. Once doughnuts are removed from oven and slightly cooled, dip one side of doughnuts quickly into butter, then dip into sugar mixture to coat
  15. Allow butter to dry before serving
  16. Enjoy!
