Irish Twice Baked Potato Bites
  • 20 small, golf ball sized potatoes (I used a mixed bag of red and yellow)
  • 1½ cup heavy whipping cream
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ cup shredded cheddar cheese
  • 1 Tbs butter, melted
  • ½ cup canned corned beef
  • Sour cream, green onions and bacon bits for garnish
  1. Preheat oven to 450 F
  2. Line a baking sheet with foil and spray with non-stick cooking spray
  3. Wash each potato thoroughly and pat dry
  4. Cut a small amount off of one side of each potato so that they can stand upright on baking sheet
  5. Using a fork, carefully pierce holes all over each potato
  6. Bake for 40 minutes (add more time if potatoes are on the bigger side)
  7. Remove from oven and allow to cool completely before handling
  8. Cut the top off of each potato and carefully scoop the insides into a large bowl, returning the hollowed potatoes to the baking sheet
  9. Add heavy whipping cream, melted butter, corned beef, cheese, salt and garlic powder to potatoes and blend using a hand mixer until well combined
  10. Stuff potato mixture into each potato and continue baking in the oven for an additional 10 minutes
  11. Remove from oven and top with sour cream, green onions and bacon pieces
  12. Enjoy!
