Simple Blackberry Bread Recipe

  • 1½ cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ¼ tsp cinnamon
  • 1 cup fresh blackberries (more or less to taste)
  • 1 cup sugar
  • ½ cup heavy whipping cream
  • 5½ Tbs butter, melted
  • 2 large eggs
  • 2 Tbs lemon juice
  • Glaze: (optional)
  • Fresh blackberry juice, strained of all seeds + confectioners sugar (amounts depend on your preference of thickness)
  1. Preheat oven to 350 F
  2. In a large bowl, combine flour, salt, baking powder, and cinnamon
  3. In a separate large bowl, combine melted butter, sugar, eggs, heavy whipping cream and lemon juice
  4. Add in blackberries and stir
  5. Spray a standard sized loaf pan thoroughly with non-stick cooking spray and pour batter into pan
  6. Bake for 1 hour 20 minutes, or until a toothpick inserted into the middle comes out clean
  7. Allow to cool for 15 minutes before cutting and serving
  8. Glaze is optional, but recommended! Ice cream is AMAZING served on top as well!
