Glazed Blackberry Doughnuts

  • For the Doughnuts:
  • 1 cup all-purpose baking flour
  • ¾ cup dark brown sugar - packed
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ cup heavy whipping cream
  • 3 Tbs butter, melted
  • 1 tsp vanilla extract
  • 1 large egg - room temp
  • ½ cup blackberry "syrup" juice (see below)
  • For Blackberry Syrup:
  • ¼ cup sugar
  • juice of one large lemon
  • ½ cup water
  • 2 cups fresh blackberries, carefully washed
  • For the Glaze:
  • 1½ cup powdered sugar
  • 2-3 Tbs lemon juice
  • ½ tsp fresh lemon zest - if available
  1. Make the syrup first:
  2. In a medium sauce pan, combine sugar, lemon juice and water and bring to a boil. Reduce heat and simmer for 10 minutes. While simmering, pour berries into a blender and pulse. Pour berry mixture into sugar mixture through a fine mesh strainer to ensure no seeds get through. Use a spoon to stir the berries around so you can press as much juice out of them as possible. Transfer to a jar to finish cooling.
  3. For the doughnuts:
  4. Preheat oven to 350 F
  5. Spray a doughnut pan thoroughly with nonstick cooking spray.
  6. In a large bowl, combine all dry ingredients
  7. In a separate bowl, combine heavy whipping cream, melted butter, vanilla and egg.
  8. Pour ½ cup of the reserved blackberry syrup into the wet ingredients.
  9. Fold wet ingredients into dry ingredients
  10. Pour batter into a piping bag and gently fill each doughnut tin with batter. Press a few blackberries into the batter before baking if desired.
  11. Bake for 17 minutes, or until springy
  12. Allow doughnuts to cool completely before icing.
  13. For the glaze:
  14. Combine powdered sugar, lemon juice and zest into a bowl and stir. Spoon over doughnuts and allow glaze to harden just a bit before serving
