Southern Pecan Pie Cookies

  • For the Cookies:
  • 2 Cups Bob's Red Mill All Purpose Flour
  • ½ cup packed light brown sugar
  • ½ cup white granulated sugar
  • ¾ cup salted butter, softened
  • ¼ tsp ground cinnamon
  • 1 tsp vanilla
  • 1 egg
  • For the Filling:
  • 1 cup chopped pecans
  • 2 Tbs heavy whipping cream
  • 1-2 dashes ground cinnamon
  • ¼ cup packed light brown sugar
  • 1 Tbs light corn syrup
  • ½ tsp vanilla
  1. Preheat oven to 350 F
  2. In a large bowl, combine butter and sugars using a hand mixer until well combined
  3. Add in vanilla, cinnamon and egg and beat.
  4. Slowly beat in flour until just combined, being careful not to over beat the mixture.
  5. Line a baking sheet with foil and spray with nonstick cooking spray
  6. Roll dough with your hands into 1 inch balls and place onto cookie sheet
  7. Press your thumb into the center of each cookie to make a "nest" shape
  8. In a small mixing bowl, combine ingredients to make filling
  9. Spoon a little filling into the center of each cookie and bake for 10-12 minutes
  10. Allow to cool and enjoy!
