Southern Baked Cheese Grits

  • 1 cup uncooked quick grits
  • 2 eggs, beaten
  • 4 cups water
  • 1 stick salted butter
  • 1½ cup shredded Monterey Jack and Cheddar Cheese blend
  • 1 tsp minced garlic
  • ¼ tsp cayenne pepper
  • Real bacon bits and chopped green onion for garnish
  1. Cook quick grits according to package instructions
  2. Preheat oven to 350 F
  3. Spray a 2-quart sized baking dish with non-stick cooking spray
  4. Beat eggs in a bowl and temper them by adding in a spoonful or two of hot grits and stirring, then pour into remaining grits
  5. Combine all remaining ingredients (except bacon and onion) with the grits and pour into baking dish
  6. Top with a handful of additional cheese and bake for 45 minutes
  7. Remove from oven and top with bacon bits and green onion and serve!
