Let me fill you in on a little fun fact about me: I’m a huge peanut butter lover. In fact, after I typed that sentence, I may or may not have flung my pantry cabinet open and devoured a delicious spoonful of creamy peanut butter. Mmmm.
Peanut butter definitely puts me in my happy place. Peanut butter cups, peanut butter pie, peanut butter fudge… mm mm mm have mercy! I love it all. This love may possibly stem from the fact that I was born just 30 miles west of “The Peanut Capital of the World”, Dothan AL. (Fun fact: Dothan is home to approximately 1/4 of the USA’s peanut crop production. Crazy!) OR it could come from the fact that my grandfather was a peanut farmer for many years. I guess you could say peanuts run in my blood! Nevertheless, my love for the stuff is strong and true, and I always have a jar on hand in the pantry (and a spoon near by for snacking!) 😉
Recently the wonderful people at Pic’s Peanut Butter sent me a jar of their smooth peanut butter to try out. Never heard of Pic’s? Neither had I. But now that I know about it, I must it share with y’all!
Pic’s Peanut Butter comes to us all the way from Nelson, New Zealand. Production of this delicious peanuty smear started almost 10 years ago when the creator noticed “added sugar” started appearing on the labels of other brands of peanut butter. This was something that was mostly unheard of in New Zealand until around 2005. I found that REALLY interesting! Growing up in the United States, all I’ve ever known is sugary peanut butter. When I received a jar of Pic’s Peanut Butter, I gave it a good stir and dug right in, not even looking at the label. I was surprised at first to find that it did not taste like the peanut butter I’ve always known. That’s when I turned the jar over and found this:
Y’all. This is REAL peanut butter! I wasn’t so sure how I liked it at first, but that’s because I was expecting it to taste sweet. Then I thought about it for a second, and then took another bite. This time, I let my taste buds enjoy and appreciate the rich peanut flavors. This was the first time in my life that I’ve had genuine peanut butter with no sugar, and I am a fan! I’m not sure that I’ll completely replace my sugary peanut butter, but I’ll definitely always have a spot for Pic’s.
My mind is swarming with all of the yummy dishes you can make with Pic’s Peanut Butter! It would be an awesome snack to pair with fresh fruit. I’m even thinking about making a protein smoothie with it! There’s no guilt in adding it to your diet, because this is the good-for-you stuff!
As I mentioned earlier, I love peanut butter desserts. Since this peanut butter has no added sugar, I thought it would be perfect in my great grandmother’s peanut butter pie recipe. Of course, I had to add sugar to make the pie, but I feel much better knowing that it’s not SO overly sweet. The rich peanuty flavor comes out perfectly in this pie. It’s truly scrumptious!
Here’s what you’ll need to make this Easy Peasy Peanut Butter Pie:
- 1 graham cracker crust (store bought is fine!)
- 1 8 oz container of reduced fat cool whip
- 1/2 cup Pic’s Creamy Peanut Butter
- 1 3 oz package of cream cheese, softened
- 1 cup powdered sugar
- In a large mixing bowl, combine cream cheese, sugar and peanut butter. Stir until well blended.
- Fold in cool whip.
- Pour into pie crust. Chill for 2+ hours
